- 50 g sugar (¼ cup)
- 2 teaspoons baking powder
- 0.5 teaspoon cinnamon
- 1 pinch salt
- 60 g butter (soft)
- 80-90 ml milk

- approx 20 g butter (melted – 2 tablespoons)
- 100 g sugar (½ cup)
- 2 teaspoons cinnamon
ingredients for bun icing
- 100 g powdered sugar (⅔ cup)
- approx 35 ml heavy cream

How to make express cinnamon buns
Step 1 – preparations
- Grease the baking pan with butter and dust with flour.
- Preheat the oven to 180 ℃ (top/bottom heat mode) or 170 ℃ (convection).
Step 2 – preparing the cinnamon buns
- Add flour to a large bowl, add the remaining dry ingredients.300 g all-purpose flour, 50 g sugar, 2 teaspoons baking powder, 0.5 teaspoon cinnamon, 1 pinch salt
- Add butter and egg.60 g butter, 1 egg
- Pour in almost all the milk and start mixing/kneading the dough.80-90 ml milk
- If the dough is not sticky enough, add the rest of the milk, and if it’s too sticky, add a little flour (I didn’t have to).
- Take the dough out onto a lightly floured surface and roll it out into a thin flatbread.
- Mix the sugar for the filling with cinnamon.100 g sugar, 2 teaspoons cinnamon
- Brush the entire surface of the dough with melted butter.approx 20 g butter
- Sprinkle the top of the dough with cinnamon sugar.
- Roll the dough into a log.
- Cut the dough into 8 portions.
- Arrange the buns in the prepared pan.
Step 3 – baking the buns
- Bake the buns for about 20-25 minutes – until they are nicely golden brown. You can also check with a toothpick to see if the dough inside is well baked.
- Cool the finished buns before frosting.
Step 4 – preparing the glaze for the buns
- Pour the powdered sugar into a bowl. Add heavy cream (regular milk can also be used) in portions and mix until you get a thick and smooth frosting.100 g powdered sugar, approx 35 ml heavy cream
- Frost the top of the buns with the icing.

Express Cinnamon Buns without Yeast – Notes
My daughter doesn’t like yeast cakes, and whenever I bake cinnamon buns, she walks around sniffing them but doesn’t eat them because she doesn’t like the dough itself. That’s why I came up with no-yeast cinnamon buns. The dough is more similar to a semi-shortcrust pastry and can be nicely rolled out and coiled. I prepared the cinnamon filling just like for traditional cinnamon buns, and added a sweet glaze on top. I got very appetizing buns that stay fresh better than yeast buns, and even after a few days, they were just as good as on the day they were baked. What ingredients are needed for quick cinnamon buns?
The most important thing is to replace yeast with baking powder – use 2 teaspoons of it so that the buns rise and puff up. Overall, these buns won’t be as soft and fluffy as yeast buns, because it’s a completely different dough. But they are aromatic, stay fresh for a long time, and don’t harden. And what else is needed for the buns besides baking powder?
- sugar – I added only a small amount to the dough itself, just 50g of sugar; all the sweetness comes from the filling and the icing. For the filling, I used regular white sugar, but you can also use brown sugar. For the icing, you will need powdered sugar. With it, the rolls are already sweeter. If you prefer less sweet rolls, you can sprinkle the top of the rolls with just a little powdered sugar instead of icing.
- butter – I used extra butter with 82% fat content, but you can also use a butter blend or even vegetable baking butter.
- heavy cream – I prepared the icing with 30% cream, as it makes a thicker icing; instead, you can use regular milk or even water.

How to store quick cinnamon rolls?
Rolls that are not eaten on the day of baking should be transferred to an airtight container with a lid to prevent them from drying out. This will help them stay fresh for a long time. You can also freeze cinnamon rolls for about 3 months.
