creamed cake with orange and glaze recipe

Why bake this simple orange cake?

I recently felt like having a simple, yet moist and aromatic cake, and since I had oranges, I decided on an orange cake. As a base, I chose the recipe for Queen Victoria’s butter sponge cake. This is a type of butter sponge cake where butter, sugar, and flour are added in equal portions. To enhance the flavor and add a citrus aroma, I added freshly grated orange zest and orange juice. Finally, I drizzled the cake with a simple orange glaze, and it was ready! I took the cake to friends for a game night, and it disappeared in no time. I think that’s the best recommendation :) So be sure to save this recipe, because not only is the cake super simple and quick to prepare, but it also tastes exceptional!

Ingredients needed to bake a moist orange cake

To make such a fluffy orange cake with glaze, you only need a few basic ingredients that you either already have at home or can easily get in any store. Below is a shortened list of the products I used and possible substitutes.

    • butter – I use 82% extra butter, and it will be the best, but ultimately you can replace it with a butter blend or vegetable butter.
    • sugar – you need powdered sugar for both the cake and the icing, but for the cake, instead of powdered sugar, you can also use regular sugar (preferably fine), only then you need to mix the butter with sugar longer – until no sugar crystals are felt in the mixture.
    • orange – you need the zest grated from an orange and its squeezed juice; if you don’t have the fruit, you can use carton juice, and instead of zest, you can use orange flavoring.
    • all-purpose flour – any flour will be good, use your favourite

How to make sure the orange cake turns out well?

This is a creamed orange cake, so it’s important that the ingredients are at room temperature! Therefore, take the butter and eggs out of the refrigerator a few hours earlier, as well as the orange if you keep it in the fridge. If you forget, you can briefly warm the butter in the microwave. You can cover the eggs with hot water and leave them in it for about 10-15 minutes to warm them up.

Besides the temperature of the ingredients, the mixing time is crucial. Cream the butter and sugar for quite a long time – it needs to become fluffy and light in color. However, later, when you add the remaining ingredients, mix them on low speed and very briefly – just until combined. Overmixing can cause the cake to be tougher, or even dense!

How to reduce the calorie content of orange cake?

A slice of cake with icing has about 392 kcal, which seems not bad, but it’s still quite a bit ;) To make the fluffy orange cake slightly lower in calories, you can skip drizzling it with icing. Such a slice of cake (for 10 servings) without icing will have 330 kcal (carbohydrates – 36 g, proteins – 5 g, fats – 19 g).

How to store moist orange cake?

After baking and cooling, it’s worth transferring the orange cake with icing to an airtight container with a lid. This way, it will retain its moisture and fluffiness for several days. You don’t need to keep the cake in the refrigerator – in the cold, the butter in the cake will harden and cause the cake to become firm. However, you can freeze this cake for about 3 months.
