Recipe for a simple cake with ginger and raspberries
Prepare with me today an incredibly simple and delicious ginger raspberry cake. You can prepare this cake even without using a mixer! Thanks to the large amount of raspberries, the ginger cake is wonderfully moist and incredibly tasty. This cake is perfect for a winter dessert, but not only. - 375 g wheat flour – all-purpose (2.5 cups)
- 200 g sugar (I used cane sugar – 1 cup)
- 2 teaspoons baking powder
- 2 teaspoons ground ginger
- 2 teaspoons ginger (fresh, finely grated)
- 2 eggs (size L)
- 125 ml oil
- 125 ml buttermilk
- 250-300 g raspberries (I used frozen)

How to make ginger cake with raspberries step by step
Step 1 – preparations
- Preheat the oven to 180 degrees (top/bottom heat mode) or 170 degrees (fan-assisted).
- Line the baking tin with baking paper or grease it with butter and sprinkle with flour or breadcrumbs.
Step 2 – prepare the batter
- In a large bowl, add flour, sugar, baking powder, ginger, and grated ginger – mix with a spoon.375 g wheat flour – all-purpose, 200 g sugar, 2 teaspoons baking powder, 2 teaspoons ground ginger, 2 teaspoons ginger
- Crack the eggs into a smaller bowl and whisk with a fork – pour into the dry ingredients.2 eggs
- Add oil and buttermilk.125 ml oil, 125 ml buttermilk
- Mix everything together with a spoon – the batter will be thick.
- Add raspberries and mix – if you have fresh raspberries, you can place them directly on the batter in the pan so they don’t break apart when mixing with the thick batter.250-300 g raspberries
- Transfer the batter to the pan – you can gently press it down with your hands.
Step 3 – baking the cake
- Place the pan with the batter into the preheated oven and bake for about 30 minutes – until a dry skewer comes out clean.
- After baking, let the cake cool.
- Before serving, you can additionally sprinkle it with powdered sugar.

Ginger and raspberry cake – notes
My today’s raspberry cake comes from Donna Hay’s book “Modern Baking” – although I adapted it a little to my taste here. The cake itself is very tasty, moist, and stays fresh for a long time. And what’s more, as you can see in the recipe, it’s very simple and quick to make. Having frozen raspberries in the fridge, you can have it ready in just 40 minutes! That’s why it’s a perfect last-minute cake recipe. I highly recommend it!

What ingredients are necessary to bake a ginger cake?
To prepare the cake, you will only need a few basic ingredients. Below is a condensed list of products I used and possible substitutes.
- sugar – I used cane sugar; the author in the recipe specified 90 g of dark brown sugar and 110 g of regular white sugar. You can make the cake with both types, or with just one of them.
- oil – I used rapeseed oil, but you can also use another oil with a delicate and neutral flavor.
- buttermilk – instead of buttermilk, you can also use kefir, or a thinner natural yogurt; as a last resort, you can use regular milk – that will also be fine.
- ginger – both ground ginger (in spice form) and fresh ginger are used for the recipe; if you don’t have fresh ginger, use 3 teaspoons of ground ginger.
- raspberries – these can be frozen fruits (you don’t need to thaw them beforehand) or fresh ones. You can also replace raspberries with other fruits – a firmer diced pear or apple would work well here.

How to diversify the flavor of ginger cake?
In the book, the author adds chopped dark chocolate to the cake. I opted out of it because my daughter isn’t fond of cakes with chocolate. You can also use chopped milk chocolate if you prefer sweeter cakes.
Besides chocolate, the recipe also uses “mixed spice” – 1 teaspoon. Mixed spice is a blend of warming spices consisting mainly of cinnamon, nutmeg, ginger, allspice, and other spices. I was in the mood for a more ginger-flavored cake and omitted this addition. Mixed spice is not generally available in Poland, but you can replace it with a teaspoon of gingerbread spice. Pay attention to the spice’s ingredients – make sure flour or sugar isn’t listed first. Such a spice would be less aromatic. As always, I recommend preparing homemade gingerbread spice from my recipe :)

How many calories does ginger cake with raspberries have?
The ginger cake prepared with my ingredients had about 300 kcal per 100 g. The cake can be cut into 20 portions, in which case one slice of cake will have only 180 kcal (carbohydrates – 25 g, fats – 8 g, protein – 3 g). Such a low-calorie cake makes it a great idea for people on an elimination diet :)

How to store ginger and raspberry cake?
After cooling completely, it’s best to transfer the cake to an airtight container with a lid. This will prevent the cake from drying out and keep it fresh for a long time. In such a container, the cake can sit for a few days. If it’s hot, I recommend putting the cake in the refrigerator on the second day to prevent it from spoiling due to the large amount of raspberries.
