Recipe for gingerbread cheesecake with chocolate glaze

For the upcoming Christmas holidays, bake a gingerbread cheesecake from my recipe. This aromatic cheesecake is baked on a gingerbread cookie base, and the cream cheese filling has added gingerbread spice.   • 150 g gingerbread cookies (I used ones without chocolate and icing)
  • about 50 g butter (melted)

  • 1 kg quark cheese (for cheesecakes – I used full-fat from a bucket – from Piątnica)
  • 5 eggs (size L)
  • 200 g sugar (1 cup – or to taste)
  • 2 teaspoons gingerbread spice
  • orange zest (optional – a few drops of orange extract can also be used)
  • 2 tablespoons flour (wheat or potato starch)
  • 150 g natural yogurt (I used natural skyr)

  • 100 g chocolate (I used half milk and half dark)
  • about 50 ml heavy cream

How to make the gingerbread crust

  • Blend the gingerbread cookies finely – you can also put them in a thick bag and crush them with a rolling pin.

  • Add melted butter and mix.

  • Line the baking pan with parchment paper.
  • Spread the cookies and press them into the bottom of the springform pan.

How to make gingerbread cheesecake

  • Transfer the quark cheese to a large bowl.
    1 kg quark cheese
  • Add eggs, sugar, flour, yogurt, gingerbread spice, and grated orange zest.
    5 eggs, 200 g sugar, 2 teaspoons gingerbread spice, orange zest, 2 tablespoons flour, 150 g natural yogurt
  • Briefly blend the ingredients – just until combined into a smooth mass.
  • Pour the cheesecake mixture onto the gingerbread crust.
  • Bake in an oven preheated to 150 degrees Celsius (top-bottom mode) for approximately 1.5 hours.
  • After baking, leave the cheesecake in the oven until it cools down – for about an hour.
  • Refrigerate the cheesecake for a few hours – or preferably overnight.

How to make chocolate topping for cheesecake

  • Pour some water into the bottom of a pot and bring it to a boil.
  • Place a heatproof bowl on top.
  • Add broken chocolate and heavy cream – heat until the chocolate melts.
    100 g chocolate, about 50 ml heavy cream
  • Spread the topping over the top of the cheesecake.
  • Decorate as desired.

Gingerbread cheesecake on a gingerbread cookie base – notes

Gingerbread cheesecake on gingerbread cookies is a delicious and aromatic cheesecake perfect for Christmas and the carnival season.

You’ve probably baked gingerbread cookies for Christmas, and you can use them here.

The gingerbread cookies should be blended into fine crumbs, or thoroughly crushed with a rolling pin. If the cookies are brittle, you won’t have much trouble with this.

You mix these crushed cookies with melted butter and line a springform pan with them.

I prepared the gingerbread cheesecake as usual – meaning I put all the ingredients directly into the mixer bowl and blended until combined.

I didn’t separate the egg whites and yolks here, and I didn’t whip the egg whites.

What kind of cream cheese to use for gingerbread cheesecake?

As always, I recommend good, full-fat cream cheese from a tub. I most often use Piątnica.

For flavor, I added gingerbread spice (here I recommend homemade spice) and grated orange zest to the cream cheese.

I added two teaspoons of spice, and it didn’t overpower the cheesecake’s flavor. If you want, you can add one more teaspoon.

I baked the cheesecake with gingerbread spice as usual at a lower temperature, but for longer.

I always bake them in top-bottom mode at 150-160 degrees Celsius.

A lower baking temperature ensures that the cheesecake doesn’t rise too much during baking and, at the same time, doesn’t collapse after baking.

Cool the cheesecake and chill it in the refrigerator, then drizzle with chocolate glaze before serving.
