  • 30 g butter (melted)

How to make tiramisu donuts step by step

    Step 1 – preparations

    • Crumble the yeast into bowls and add sugar. Add slightly warmed milk (lukewarm) and mix.

    • Cover the bowl with a cloth and set aside in a warm place for about 20-30 minutes for the yeast to activate (they will significantly increase in volume and become thick).

    Step 2 – Dough preparation for donuts

    • To a large bowl, add flour, egg yolks, sugar, and vodka (if using).
      300 g all-purpose flour, 3 egg yolks, 30 g sugar, 1 tablespoon vodka

    • Add the yeast starter and begin kneading the dough.
    • Once the ingredients combine into a uniform dough, add the melted butter (but not hot) and knead the dough for another 5 minutes.

    • Cover the bowl with the kneaded dough with a cloth and set aside in a warm place for about an hour, until it doubles in volume.

    Step 3 – Donut preparation

    • Take the risen dough out onto a kitchen counter (you can lightly dust it with flour, but not too much!) and knead it briefly.

    • Divide the dough into 9 portions – I measured the dough portions with a kitchen scale, about 60-63 grams.

    • Form each portion of dough into a nice ball and place the donuts on pieces of cut baking paper.

    • Cover the donuts with a cloth and let them rest for about 30 minutes to puff up.

    Step 4 – preparing the donut filling

    • While the donuts are rising, prepare the mascarpone filling – transfer the cheese to a bowl and mix with sugar and amaretto (if using) – sweeten to taste if you prefer sweeter creams.

    • Transfer the cream to a piping bag fitted with a nozzle – I used a Wilton star nozzle.

    Step 5 – frying the donuts

    • Pour oil into a saucepan or pot and heat it to about 180℃.

    • Place the donuts into the hot oil, maximum 4 per batch (together with the paper – paper on the bottom), remove the detached papers and fry the donuts for about 2 minutes on one side.

    • Flip the donuts to the other side and fry for another 2 minutes.

    • Remove the donuts onto a paper towel to drain excess fat.

    Step 6 – filling the donuts

    • Gently slit the side of the donuts with a knife.

    • Insert the piping bag with cream into the incision and squeeze out a portion of mascarpone cream.

    Step 7 – preparation of coffee glaze for doughnuts

    • Sift the powdered sugar into a bowl and add coffee in portions – mix thoroughly.

These doughnuts with coffee and mascarpone will be perfect for Fat Thursday, but not only then! After all, doughnuts are an ideal dessert not only during Carnival but throughout the year.     Ingredients for Homemade Mascarpone Doughnuts

    To make such doughnuts at home, you will need a few basic ingredients. Below is a condensed list of products I used and possible substitutes.

    • yeast – I used fresh yeast, but you can substitute it with instant yeast – use a package of about 7 g
    • milk – I used 1.5% UHT milk, but you can use any milk
    • all-purpose flour – type 500 or 550 flour will be best, but you can use your favourite
    • mascarpone cheese – this Italian cheese is readily available in any larger supermarket or discount store – it’s regularly sold at Lidl and Biedronka
    • coffee – you will need coffee for the glaze, but if children are going to eat the doughnuts, you can prepare decaffeinated coffee, or make a grain coffee – e.g., Inka

    How to make doughnuts light and fluffy?

    For your tiramisu doughnuts to be light as a cloud after frying, it’s important that the dough rises well. Remember to cover them and place them in a warm spot without drafts – you can place the bowl with the dough and then the doughnuts next to a warm radiator. Hiding them in the oven also works well. I turn it on to 30 degrees Celsius and put the bowl or baking sheet with the doughnuts inside. In such conditions, the yeast dough rises very quickly and beautifully. If the dough still doesn’t rise, the yeast has probably failed – either it was too old, or it was “killed” by too high a temperature – which is why the milk for preparing the yeast starter cannot be too hot – it should only be lukewarm!

    It is also important to prepare the finished dough and doughnuts without adding flour, or with only a minimal amount. If you add a lot of flour while kneading the dough or dividing it into portions, the doughnuts will be tough!

    How to divide dough for doughnuts if I don’t have a kitchen scale?

    If you don’t have a scale and can’t weigh them, you can flatten (or lightly roll out) the dough to about 1.5 cm thick and cut out doughnuts with a glass. Briefly knead the scraps again and cut out new doughnuts. Try to add as little flour as possible. You can also form the dough into a ball and cut it with a knife into 8 portions, first dividing the dough in half through the middle, then into quarters, and finally each quarter in half again. You will get 8 slightly larger doughnuts.

    How to make a different flavor of cream for doughnuts?

    If you wish, you can additionally mix the mascarpone cheese for the doughnut filling with coffee – then you will get even more coffee-flavored doughnuts. You can also add grated orange zest to the cream – tiramisu doughnuts with a delicate hint of orange will taste excellent!

    How to store homemade mascarpone donuts?

    Donuts are best eaten on the first day – that’s when they are most fluffy and delicate. But these donuts are just as delicious the next day. To keep them soft and light, transfer them to an airtight container with a lid.

    You can also freeze such donuts – it’s best to freeze donuts without glaze. Wrap each donut (once completely cooled) in cling film and put it in the freezer.
