Recipe for a simple creamed almond cake

Today I invite you to try a delicious and very simple to prepare Italian almond cake. This creamed butter cake is triple almond. I added almond extract and almonds ground into flour to the batter. The addition of chopped almonds baked on top of the cake makes it extra crunchy when eaten. Such an almond cake will be a perfect addition to a cup of coffee or tea. You must try it!

  • 180 g butter (soft)
  • 200 g powdered sugar (1⅓ cups)
  • 2 eggs (size L – at room temp.)
  • approx. 1 teaspoon almond extract (or flavoring)
  • 250 ml milk (at room temp.)
  • 250 g all-purpose flour (1⅔ cups)
  • 2 teaspoons baking powder
  • 50 g almond flour (½ cup)
  • approx. 75 g almonds (coarsely chopped – ½ cup)

How to make Italian almond cake step by step

    Step 1 – preparations

    • Grease the baking pan with butter and sprinkle with wheat flour or breadcrumbs – you can also line it with baking paper.
    • Preheat the oven to 180 ℃ (top/bottom heat mode) or 170 ℃ (convection mode).
    • Sift together wheat flour, baking powder, and almond flour through a fine sieve.

    Step 2 – preparing the almond cake

    • Transfer the butter to a bowl with the sugar and almond extract.
      180 g butter, 200 g powdered sugar, approx. 1 teaspoon almond extract

    • Beat them together until they become fluffy and light in color – I usually beat for about 3 minutes on the mixer’s highest speed.

    • Add the eggs one by one to the butter mixture, mixing briefly after each addition, but now on low speed.

    • Alternately add a little flour and a little milk to the batter, mixing briefly on low speed.

    • Finally, add the rest of the flour and mix briefly – stop mixing when you still see remnants of flour on the sides.

    • Then gently stir the batter with a spoon.
    • Transfer the batter to the prepared pan.

    • Sprinkle the top of the almond cake with chopped almonds.

    Step 3 – baking the almond cake

    • Place the pan with the cake into the preheated oven and bake for about 40-50 minutes, until a toothpick inserted comes out clean.
    • After baking, let the cake cool.
    • Before serving, you can additionally dust them with a little powdered sugar.

    Italian almond cake – notes

    I like to have a piece of good cake with my coffee, and it’s best when the cake is simple and quick to prepare. And that’s exactly what this cake is – quick and simple. Plus, it’s light, fluffy, and subtly almond-flavored. You can even eat such a cake for breakfast without a problem, as it will provide you with carbohydrates and fats for energy, as well as plenty of protein. So, if you like such almond cakes, you must bake this cake as soon as possible!

    What ingredients are needed to bake an almond cake?

    To make this cake, you only need a few basic ingredients that you either already have at home or can easily buy at your nearest Biedronka or Lidl. Below is a short list of the products I used and possible substitutes.

    • butter – I used extra butter with 82% fat content; you can optionally replace it with a butter blend or vegetable butter.
    • milk – I used 1.5% milk; you can also use milk with a different fat content or replace it with plant-based milk (drink).
    • almond flour – this is nothing more than finely ground almonds; you can buy it at Lidl or Biedronka, but you can also finely grind regular almonds yourself (e.g., in a coffee grinder). If you grind them with the skin on, the cake will have a slightly darker and light brown color.
    • almonds – I chopped almonds with the skin on; you can also use blanched almonds, and if you can’t get whole almonds, sprinkle the top of the cake with almond flakes or slivered almonds – that will also be fine.

    What to watch out for when making a creamed cake?

    This almond cake is a creamed cake, which means creaming (mixing) butter with sugar until fluffy. This later gives the finished cake its fluffiness and lightness. To ensure the cake doesn’t lose its fluffiness, isn’t sticky, and heaven forbid – doesn’t have a soggy bottom – you must pay attention to the temperature of the ingredients. All of them must be at room temperature, or slightly lukewarm.

    Therefore, take the butter, eggs, and milk out of the refrigerator about 2 hours beforehand. This allows them to warm up properly before use. If you forget, you can briefly heat the butter in the microwave (if it becomes slightly liquid, that’s fine). You can also slightly warm the milk in the microwave. For the eggs, place them in a bowl and pour hot tap water over them. Let them sit for 10-15 minutes.

    How many calories does almond cake have?

    In the table below the recipe, I provided the calorie count for 100 g of almond cake. If you divide the cake into 12 roughly equal pieces, each will have approximately 336 kcal (carbohydrates – 35 g, fats – 19 g, proteins – 6 g).

    How to store almond cake?

    The cake can be kept at room temperature for several days. To keep it fresh and fluffy longer, I recommend covering it with a cake dome or transferring it to an airtight container.

    You can also freeze the cake for about 3 months.
