Cottage cheese cheesecake – notes
I really like cottage cheese, and lately I eat it almost every day – by itself or as an addition to something. For some time now, I’ve been paying more attention to the amount of protein I consume, and cottage cheese allows me to increase its quantity in my daily diet. And as you can probably guess, when you eat something every day, it eventually gets boring. That’s why I’m looking for new uses and new ways to prepare something with cottage cheese so I don’t get tired of it. Some time ago, I came across a reel on Facebook from ketowariatki with just such a cottage cheese cheesecake, and I really liked the idea. I slightly adapted the recipe for myself, made the cheesecakes, and also served them to my husband. He absolutely can’t stand cottage cheese, but in this form, he ate it and said it was tasty! Win-win!

What ingredients are essential for preparing a protein no-bake cheesecake?
To make this healthy, protein-packed dessert, you only need three ingredients:
- cottage cheese – I used Almette cottage cheese with skyr (that’s what I had on hand), although if you want to get an even higher amount of protein, I recommend Lidl’s protein cottage cheese (it has 28g of protein per package)
- jelly – I added raspberry jelly to my cheesecake, but you can, of course, use any other fruit jelly here
- water – hot water to dissolve the jelly – much less is used than indicated on the package

How to serve cottage cheese cheesecake?
I opted for simplicity and taste – I only added plenty of blueberries and wild strawberries from my balcony to my cheesecakes. Fruits are a vitamin bomb that only further enhances the nutritional value of this dessert.
If you don’t want to waste the remaining jelly, dissolve the remaining powder in about 200ml of hot water and let it cool. Then pour it over the set cheesecake and put it in the fridge for the jelly to fully set.

You can very easily increase the number of dessert servings by multiplying the ingredients, e.g., by two.
