Homemade Preserves Recipes – Sweet and Savory
In the past, no self-respecting housewife could imagine going through the winter without making preserves.
Nowadays, in the age of supermarkets where everything is on the shelves and we don’t have to worry about seasonal fruits and vegetables, we often forget about homemade preserves.
Many of us don’t know how to make them, or we simply don’t feel like it. First, because it takes time, and second — often there’s nowhere to store them.
We live in apartment buildings, and keeping dozens of jars of preserves isn’t feasible.

I also live in an apartment, but I do make preserves. Certainly not in the quantities my mother used to, but at least a few jars of each type.
Most importantly, there must always be pickled cucumbers — what you can get in the store is often a poor substitute, barely suitable even for cucumber soup, and sometimes not even that.
My kids (and we too) love homemade pickles, and none are as good as homemade. At the beginning of the cucumber season, naturally, they have to be lightly salted ;).
Lately, the weather has been very unpredictable, and the quantity and price of fruits vary from year to year. I usually make jams or preserves from the fruits that are most abundant — from strawberries, raspberries, or cherries. These are our favorite “preserve” fruits.
Of course, you can also freeze these fruits, or even better, turn some into liqueur (you’ll find several recipes in the Drinks section — including my favorite strawberry liqueur).
