Why Make Red Velvet Babka?
I found the recipe for my babka today from Jenny from the Butternut Bakery blog, and I must say, it was a real hit! The babka is incredibly simple and quick to prepare, and it’s super moist, wonderfully soft and delicate. What’s more, it stays fresh for a long time and looks very impressive. I think it’s an ideal idea for an Easter babka, but also for a weekend cake with coffee. Be sure to save this recipe for later, because it will come in handy more than once!
Here I am providing my version of the recipe – where I primarily reduced the amount of sugar added to the babka – the original had as much as 400 g of sugar (2 cups), but in my opinion, 300 g is completely sufficient, especially when combined with the glaze on top.

What ingredients are essential for baking a Red Velvet cake?
To make such an impressive cake for the holidays and beyond at home, you will need a few basic ingredients. Below I provide a condensed list of products, as well as possible substitutes.
- red food coloring – this is the base and one of the most important ingredients, without which you will not achieve that rich red hue of the cake. Gel food coloring works best here, as it doesn’t affect the consistency of the batter and is the most potent. If you have liquid food coloring, you can use a little less buttermilk; you can also use powdered food coloring, but it’s harder to dose the color here, so add it little by little, mix thoroughly, and add more if needed.
- baking soda – baking soda is a powerful leavening agent, and just one teaspoon is enough for the cake to rise nicely; if you don’t have baking soda, use 2 more heaped teaspoons of baking powder.
- buttermilk – instead of buttermilk, you can also use kefir, or optionally milk mixed with a teaspoon of vinegar or lemon juice.
- cocoa powder – a little cocoa powder is added to Red Velvet cakes to enhance the red color of the cake and give it a deep hue; do not use sweetened cocoa powder for drinks here.

Tips for a perfectly moist Red Velvet cake
This cake owes its immense moistness to a generous amount of fat – from oil and melted butter. Therefore, do not reduce the amount of fat added to the cake. If you prefer very sweet cakes, you can add an extra 100g of sugar to the cake preparation, which I omitted.
Also, remember that after mixing the fats with sugar and eggs, all subsequent ingredients should be mixed briefly on low speed, only until combined. Never mix the batter with flour for too long, as the cake might not be as nicely soft afterwards.

How to store Red Velvet cake?
After baking and cooling, the cake is best covered with a cake dome or transferred to an airtight container with a lid. This will help it retain its moistness and fluffiness. Do not put the cake in the refrigerator, as there is no need. Covered, the cake will be perfect to eat for up to about a week.
Red Velvet cake can also be frozen for about 3 months.

How many calories does Red Velvet cake have?
This bundt cake contains a lot of fat, so it belongs to the more caloric cakes. In the table below the recipe, I provided the calorie count for 100 g of the finished bundt cake glazed with icing. If you cut the bundt cake into 12 roughly similar pieces, each of them will have approximately 436 kcal (carbohydrates – 51 g, fats – 23 g, proteins – 5 g).

Finally, if you’re looking for an impressive yet truly simple cake, Red Velvet bundt cake will be a great choice. It’s moist, fluffy, and looks beautiful on the table, making it perfect as both an Easter bundt cake and a sweet accompaniment to coffee throughout the year.
