If you love waffles but don’t have the time or desire to stand around baking a large batch of them, then you absolutely must prepare these with a small amount of batter.

- 45 g all-purpose flour (3 slightly heaped tablespoons)
- 1 teaspoon baking powder
- 15 g vanilla pudding (or cream – powder – 1 tablespoon)
- 60 ml kefir (1/4 cup)
- 1 teaspoon vanilla sugar (optional)

How to Make Waffles for Two
Step 1 – preparing the waffle batter
- Crack an egg into a bowl, add flour, pudding powder, baking powder, and sugar.1 egg, 45 g all-purpose flour, 1 teaspoon baking powder, 15 g vanilla pudding, 1 teaspoon vanilla sugar
- Add kefir.60 ml kefir
- Mix everything with a kitchen whisk or a spoon.
- Let the dough rest for 15-20 minutes.
- In the meantime, preheat the waffle maker well.
Step 2 – cooking the waffles
- Lightly grease the hot waffle maker with oil – I use a silicone brush for this.
- Spoon in the batter and close the lid of the waffle maker.
- Cook the waffles until they are nicely browned and crispy on the outside.
Step 3 – serving waffles
- Serve the waffles immediately with your favorite toppings.
- Or cool them on a wire rack – do not stack hot waffles one on top of another!

Quick Waffles for Two Servings – Notes
Sometimes I really crave waffles, but all my recipes are for 10 or even more pieces, and then I just stand there baking them endlessly. That’s why I don’t always feel like making them at all. Now, thanks to Ania’s recipe for a fluffy omelet, I can prepare quick and delicious waffles in just two servings. The waffles themselves turn out super crispy on the outside and fluffy and soft on the inside. Be sure to try this recipe and save it for later!

What do you need to make waffles?
To prepare this waffle batter, you will only need a few basic ingredients that you probably already have at home. Below is a condensed list of products I used and possible substitutes.
- all-purpose flour – any type in the 450-550 range will be good, you can also try another light flour – such as oat flour
- kefir – instead, you can also use buttermilk, or a thinner, more liquid natural yogurt
- pudding powder – if you fancy a different flavor, you can also choose chocolate pudding or a fruity one; I used sugar-free pudding, but one with sugar will also be fine – only then the calorie content of the waffles will slightly increase

Why should waffle batter “rest” before baking?
By letting the batter rest for 15-20 minutes, the batter will fluff up even more – you will see air bubbles on the surface of the batter, and the gluten in the flour has time to relax, which results in a better batter.
What makes waffles crispy?
To make waffles crispy, the waffle maker is very important. It should have high power – a minimum of 1000 W, so it can heat up thoroughly. Before pouring the batter into the waffle maker, first turn it on and heat it to maximum. Then pour in the batter, close the lid, and bake the waffles for a few minutes – for me, it was about 5 minutes. During this time, the batter has a chance to brown well on the outside and rise.
After baking, it’s best to place the waffles on a wire rack so they can cool freely – if placed on a flat plate, they will steam from the bottom and become soft. Also, do not stack hot waffles one on top of another, as they will lose their crispiness!

How to serve waffles?
I served my waffles with vanilla skyr and fresh fruit. You can, of course, eat them with your favorite toppings. Nutella, your favorite jam, or other fruits will work great.
