- 1 teaspoon cinnamon

How to make carrot cake with pistachios step by step
Step 1 – preparations
- Preheat the oven to 170℃ in convection mode or 180℃ (top/bottom heat mode).
- Line the baking pan with parchment paper or grease it with butter and dust with flour.
- Peel the carrots and grate them on a fine grater.approx 190 g carrots
- Chop the pistachios.approx 70 g pistachios
- Mix the flour with baking powder and cinnamon.150 g all-purpose flour, 2 teaspoons baking powder, 1 teaspoon cinnamon
Step 2 – preparing the carrot cake batter
- In a large bowl, combine sugar, Greek yogurt, eggs, and oil – mix with a whisk until combined.2 eggs, 100 g sugar, 120 ml Greek yogurt, 80 ml oil
- Add the mixed flour to the bowl and stir.
- Add the grated carrots and pistachios to the bowl and mix with a spoon.
- Transfer the batter to the prepared pan.
Step 3 – baking the carrot cake with pistachios
- Place the pan with the batter into the preheated oven and bake for about 50 minutes – until a wooden skewer comes out clean.
- After baking, let the cake cool.
Step 4 – preparing the cottage cheese topping
- Transfer the cottage cheese to a bowl, add maple syrup and mix.150 g cream cheese, approx. 2 tablespoons maple syrup
- Spread the cottage cheese mixture over the top of the cake.
- Finally, you can additionally sprinkle the cake with chopped nuts.pistachios

Why bake this carrot and pistachio cake?
During winter, when the availability of delicious fruits is more limited and I don’t want to eat apple cakes all the time, vegetable cakes come to my rescue. This time, I baked my family this simple, moist carrot cake with crunchy pistachios. Carrot cakes are very grateful cakes because they are usually nicely moist, soft, stay fresh for a long time, and are very quick and simple to prepare. Here, I also opted for the addition of crunchy pistachios and a light cream cheese with maple syrup. The whole thing turned out very tasty and perfect for a winter dessert. I highly recommend it and encourage you to bake it!

Ingredients for moist carrot cake with pistachios
To make this carrot cake, you will only need a few basic ingredients that are very easy to buy in any store. Below is a shortened list of the products I used and possible substitutes.
- Greek yogurt – instead of Greek yogurt, you can also use natural skyr or thick natural yogurt
- oil – I used rapeseed oil, but you can also use another oil with a delicate flavor
- pistachios – I bought mine at Lidl – you can get them already shelled (I give the weight of the nuts themselves, without shells!), you can also use salted pistachios – their salty taste will nicely complement the sweetness of the carrots. If you don’t have anywhere to buy pistachios, you can use other nuts – whatever you have.
- cream cheese – I used regular cottage cheese here, the spreadable kind, it can also be yogurt cheese, or even quark for cheesecakes – use a lighter one

What can you put on top of the cake instead of cream cheese frosting?
If you want to enhance the cake’s flavor, instead of cream cheese frosting, you can make mascarpone cream – it’s nice to mix it with 100g of melted white chocolate and then spread it on top of the cake.
If you want to slightly reduce the cake’s calorie content, you can completely forgo the cream cheese and just sprinkle the top with powdered sugar.

How to store carrot and pistachio cake?
After baking and cooling, I recommend transferring the cake to an airtight container to keep it fresh even longer. At my place, the cake with cream cheese on top sat out (on the kitchen counter) for 4 days and was still good to eat. However, if your home is very warm, it’s worth putting the cake in the refrigerator to prevent it from spoiling – especially the cream cheese layer.
You can also freeze the cake for about 3 months.
