  • 375 g butter (softened)
  • 2 cans dulce de leche ((approx 900 g) at room temp.)

How to make quick honey cake step by step

    Step 1 – preparations

    • Line the baking pan with baking paper or cling film.
    • Arrange one layer of biscuits on the bottom.

    • If you don’t have ground nuts, blend them thoroughly into a powder.

    Step 2 – preparing the dulce de leche cream for the honey cake

    • Transfer the soft butter to a large bowl.

    • Blend it on high speed with a mixer for at least five minutes – until the mixture becomes light in color and visibly fluffy.

    • Then reduce the mixer speed and, adding the dulce de leche mixture in portions, mix until combined.

    • Once you’ve added all the dulce de leche, turn off the mixer.

    • Add the ground nuts and mix thoroughly with a spoon.

    Step 3 – assembling the cake

    • On the layer of biscuits in the pan, spread ⅕ of the cream and distribute it evenly.

    • Layer the second layer of biscuits and again ⅕ of the cream – you should have a total of 5 layers of biscuits and cream – finishing with cream.

    • Blend about 50 g of biscuits into a fine powder and sprinkle them over the top of the cake.

    • Wrap the cake pan with cling film and place it in the refrigerator (or put it on the balcony) for the entire night, so that the biscuits soften.
    • Before serving, cut the cake into portions and place half a walnut on each piece.

    Why make a no-bake honey cake?

    During the pre-holiday season, we are all very busy and have a lot on our minds. Gifts, cleaning, cooking, and baking. Honey cake is one of the more traditional holiday cakes (and not only), but unfortunately, it requires a lot of work – first preparing the honey dough, then baking separate honey layers, cream, and assembly, and finally a long wait for the cake to soften and be perfect. I have an express and super easy solution for this. You can prepare my quick no-bake honey cake. There’s no honey dough here, but instead, I used shortbread biscuits. Plus a delicious toffee cream inspired by Kwestia Smaku and tasty nuts. This cake is perfect for Christmas, but also for New Year’s Eve, Easter, and various family celebrations.     What ingredients are needed to make a no-bake honey cake with biscuits?

    To make such a no-bake honey cake with biscuits, you will only need 4 ingredients! What’s more, they are easily available in every store. So do some quick shopping and prepare this cake for your loved ones. I used the following products here:

    • biscuits – buy any biscuits, you will need about 600 g – for me, it was about 100-120 g per layer plus some ground for the top, you can also use chocolate biscuits, or make alternating light and chocolate layers
    • butter – extra 82% butter will be best, remember that it must be soft, so take it out of the fridge earlier
    • dulce de leche – you will need two cans of dulce de leche – if you have 500 g cans, you can use them whole so as not to waste them – the cream will only be a little sweeter at most
    • walnuts – I specified the weight of shelled nuts! you can buy them already ground, or grind them at home – e.g., with a food processor

    How to make other flavor versions of honey cake?

    If you want, you can experiment a bit with the flavor of your honey cake. For example, instead of biscuits, or part of them, you can use shortbread spice cookies with a more rectangular or square shape – e.g., speculoos cookies.

    Instead of walnuts, you can use ground hazelnuts or ground almonds.

    You can also use flavored dulce de leche – e.g., chocolate dulce de leche.

    How to make no-bake honey cake – tips to always succeed

    The cake is extremely simple to prepare and it’s bound to succeed! The only problems that can arise are with the cream if the ingredients are not at room temperature!

    Therefore, be SURE to take all ingredients out onto the kitchen counter – butter, dulce de leche, and nuts at least 2 hours earlier, so they can warm up. If you add cold dulce de leche or cold nuts to soft butter, the cream will likely curdle!

    Another thing – do not serve the cake immediately, because the biscuits will be hard and you won’t be able to cut them into nice pieces. The cake needs at least half a day, or preferably a whole day, for the biscuits to soften from the cream.

    How to properly divide the cream for the honey cake?

    To ensure the layers of dulce de leche and walnut cream are more or less even, it’s worth calculating. I first weighed the empty bowl itself. Then, after preparing the cream, I weighed the bowl with the cream. From this value, I subtracted the weight of the bowl and divided it by 5 – for me, it was about 280-290 g per layer. I placed the cake pan on the scale and applied the cream, weighing it. This way, I had a similar thickness of cream in each layer.

    How to store express honey cake on biscuits?

    Honey cake is best stored in a cool place – so either in the fridge, or wrapped in foil on the balcony (if it’s cool). The cake can safely stand for several hours outside on the Christmas table. Such a warmed-up cake will have a softer and more velvety cream.

    How many kcal does no-bake honey cake have?

    In the table below the recipe, I provided the caloric value for 100 g of cake with dulce de leche cream and walnuts (using the products I used). If you divide it into 24 more or less similar portions, each of them will have approximately 398 kcal (carbohydrates – 43 g, fat – 23 g, protein – 5 g).
