You can prepare these muffins even without a mixer – just mix the ingredients with a spoon and you can bake sweet muffins. These muffins are a fit version because they are prepared without fat. Thanks to this, one orange muffin has about 140 kcal! You must try this recipe.

- 2 oranges (medium)
- approx 130 ml buttermilk
- 250 g all-purpose flour (1 ⅔ cups)
- 2 teaspoons baking powder
- 150 g sugar (¾ cups)
- 1 egg (size L)
- approx 100 g cranberries (dried)
ingredients for icing
- approx 50 g powdered sugar (⅓ cup)
- approx 2 teaspoons milk

How to make healthy orange muffins step by step
Step 1 – preparations
- Wash the oranges and zest their peel.2 oranges
- Squeeze the juice from the oranges and pour it into a measuring container in ml.
- Preheat the oven to 200℃ (top/bottom heat mode).
Step 2 – preparing the muffins
- To the orange juice in the measuring cup, add buttermilk until you have a total of 300 ml of liquid – mix.approx 130 ml buttermilk
- Pour wheat flour into a bowl, add the remaining dry ingredients and orange zest – mix.250 g all-purpose flour, 2 teaspoons baking powder, 150 g sugar
- Add the juice with buttermilk and mix with a spoon.
- Add the egg and mix.1 egg
- Add cranberries and mix.approx 100 g cranberries
- Spoon the batter into the muffin liners.
Step 3 – baking the muffins
- Place the muffins in a hot oven and bake for about 20-25 minutes.
- Cool the muffins after baking.
Step 4 – preparing the icing
- Mix the powdered sugar with milk – add milk in portions.approx 50 g powdered sugar, approx 2 teaspoons milk
- Lightly drizzle the muffins with icing.

Fit cranberry muffins – notes
Today I prepared for my family these super simple and quick muffins with orange juice and orange zest, which give them an incredible aroma and taste. And while they were baking, the whole house smelled wonderfully of oranges :) Dried cranberries add a nice flavor to the muffins and increase their nutritional value. You can easily pack such fit muffins and take them to work or school to eat something good and healthier during the day. What ingredients are essential for preparing orange muffins?
To bake the muffins, you will only need a few basic ingredients. Below is a condensed list of the products I used and possible substitutes.
- orange juice – I used freshly squeezed juice and orange zest; ultimately, you can use ready-made juice – use about 150 ml of it and add 150 ml of buttermilk to it
- sugar – I used regular granulated sugar, but if you want even lower-calorie or healthier muffins, you can use erythritol or xylitol
- buttermilk – plain natural, you can substitute it with kefir or a thinner natural yogurt
- cranberries – I used dried fruit, but if you have fresh or frozen cranberries, you can also use them – you don’t need to thaw the frozen ones

How to make other flavor variations of muffins?
Orange muffins can also be baked with other additions. You can replace cranberries with, for example, raisins. You can also use other dried fruits – e.g., apricots – then cut them into smaller pieces. Instead of fruit, you can also add chopped chocolate or chocolate chips. They will taste great in combination with the orange flavor of the muffins.

How to store healthy cranberry muffins?
Due to the lack of fat, the muffins may tend to dry out slightly. Therefore, it is advisable to store them in an airtight container with a lid to prevent this. You can also freeze orange muffins for about 3 months.
