  • 2 teaspoons baking powder
  • 1.5 teaspoons gingerbread spice
  • 100 g sugar (½ cup)
  • 60 ml oil
  • 120 g Greek yogurt (½ cup)

  • 100 g butter (soft)
  • 100 g almonds (ground – 1 cup)
  • 2 egg (size L)

How to make gingerbread-almond cake step by step

    Step 1 – preparations

    • Grease the baking pan with butter and sprinkle with flour or breadcrumbs.
    • Preheat the oven to 180℃ (top/bottom heat) or 170℃ (fan-assisted).

    Step 2 – preparing the gingerbread cake

    • Pour the dry ingredients into a large bowl and mix them with a whisk or spoon.

    • Add the wet ingredients to the bowl.
      60 ml oil, 120 g Greek yogurt, 2 eggs

    • Mix everything thoroughly with a whisk or spoon.

    • Transfer the dough to the pan, level it.

    • Place in the oven and bake for 20 minutes.

    • While the gingerbread cake is baking, prepare the almond mixture.
    • Place the ingredients for the filling into a bowl.

    Step 4 – Bake the Cake with Almond Filling

    • After 20 minutes, remove the cake from the oven and immediately spread the almond filling on top.

    • Sprinkle the top with almond flakes.

    • Return the pan to the oven and bake for another 15 minutes.
    • Let the cake cool completely before serving.

    Why bake this gingerbread with almond filling?

    Everywhere around, it’s already getting festive, even though it’s still November. On the internet, Christmas ads, Christmas recipes, and gingerbread cookies are starting to dominate, and because of this, I’ve also caught that pre-holiday mood. For me, it’s still “calm” with all the Jingle Bells, but the taste is already more wintery and festive. And that’s thanks to the aromatic gingerbread cake baked with almond frangipane filling. The cake itself is incredibly simple and quick to prepare – you can even make it without a mixer (although you can use one too ;)). Moreover, it’s delicious, moist, and wonderfully presented. You can easily bake it for the upcoming Christmas holidays :)

    Ingredients needed to bake gingerbread cake with almonds

    To make this cake, you will need a few basic ingredients, which you either already have or can easily buy in any store. Below is a condensed list of products I used and possible substitutes;

    • gingerbread spice mix – the best will of course be homemade gingerbread spice mix, because it will be strong and very aromatic. If you don’t have the ingredients for it, or don’t know how to make it, you can of course use a store-bought one. However, remember to first check the ingredients of the store-bought spice mix – if flour is listed first in the ingredients, this spice mix will be weak in taste and not very aromatic. Do not buy such a spice mix! I personally recommend Kotanyi’s spice mix here.
    • yogurt – I used thick Greek yogurt, but you can also use thick (!) plain yogurt or e.g. natural skyr
    • almonds – for the frangipane mass you need so-called almond flour, which means very finely ground almonds, you can get them in any Lidl or Biedronka, you can also grind (e.g. in a coffee grinder) regular almonds
    • butter – I used extra 82% butter here and it will be the best, but ultimately you can use mixed butter
    • oil – for me it’s rapeseed oil, but it can also be another oil with a mild taste

    What to substitute for almond flakes?

    Don’t have flakes and can’t get them anywhere? No problem. Chop regular almonds into small pieces with a knife and sprinkle them over the top of the cake. In stores, besides almond flakes, you can also find slivered almonds or almond croquant – they will also work perfectly here.

    How to store gingerbread cake with almond filling?

    After baking and cooling, cover this Christmas gingerbread cake with almonds with a cake dome, or transfer it to an airtight container with a lid. This will help the cake retain its freshness, fluffiness, and moisture longer. You don’t need to keep it in the refrigerator. At room temperature and stored in a box, it can easily last about 5 days, or even longer.

    How many calories does gingerbread with almonds have?

    In the table below the recipe, I provided the calorie count for 100g of gingerbread-almond cake. If you cut it into 12 roughly equal portions, each piece of cake will have approximately 304 kcal (carbohydrates – 28 g, fats – 19 g, proteins – 6 g). It must be admitted that this is a very pleasant dose of calories, so you can easily enjoy it with coffee ;)
