Recipe for a delicious and moist cinnamon cake with cinnamon cream
I invite you to try a delicious moist cinnamon cake with cinnamon cream and cookie cream. Such a cake will be perfect for holidays, birthdays, or various family celebrations and occasions. But you can just as well prepare it for a weekend dessert. The recipe itself is simple to make, and the cake stays fresh and delicious for a long time. - 200 g all-purpose wheat flour (1 and 1/3 cups)
- 2 teaspoons baking powder
- 2 teaspoons cinnamon (ground – more level)
- 200 g sugar (1 cup)
- 4 eggs (size L)
- 200 ml oil

- 250 g mascarpone cheese (cold)
- 250 ml heavy cream (cold)
- approx. 50 g powdered sugar (1/3 cup – or to taste)
- 1 teaspoon cinnamon (ground)
- approx. 50 g Biscoff spread (optional – see notes below the recipe)

How to make cinnamon cake step by step
Step 1 – preparations for the cinnamon cake
- Grease the baking pan with butter and sprinkle with breadcrumbs or wheat flour – you can also line it with baking paper.
- Preheat the oven to 170 degrees (fan-assisted) or 180 degrees (top/bottom heat).
- Sift together the flour, baking powder, and cinnamon through a sieve.200 g all-purpose wheat flour, 2 teaspoons baking powder, 2 teaspoons cinnamon
Step 2 – preparing the cinnamon cake
- Beat together the eggs and sugar with a mixer on high speed – mix for several minutes until the mixture is very fluffy and pale in color.200 g sugar, 4 eggs
- To the beaten eggs, gradually add the sifted flour and mix on low speed.
- Also, alternately add the oil in portions – mix briefly – just until combined.200 ml oil
- Pour the batter into the prepared pan.
- Place in the hot oven and bake for about 40-45 minutes – until a wooden skewer comes out clean.
- After baking, cool the cake.
- Slice the cake into two layers of roughly equal thickness – you can also trim off the slightly domed top to get more even layers.
- You can eat the trimmed top yourself :) or finely crumble it and use the crumbs for cake decoration.
Step 3 – preparing the cream
- Transfer mascarpone, sugar, and cinnamon to a large bowl, pour in the heavy cream, and start mixing – initially on low speed.250 g mascarpone cheese, 250 ml heavy cream, approx. 50 g powdered sugar, 1 teaspoon cinnamon
- Once the mixture starts to become more uniform, increase the mixer speed to maximum and mix until you achieve a thick and stable cream – for me, this took about 2.5 minutes.
- You can also check the taste of the cream; if it’s not sweet enough for you, you can sweeten it with powdered sugar and mix briefly again.
Step 4 – preparing the cinnamon cake
- Place the bottom layer of cinnamon cake on a cake stand or a flat plate.
- If desired, you can lightly moisten it, though there’s no real need as the cake is moist on its own.
- Spread approximately 1/2-2/3 of the cream and level it. If you want the cake to look attractive, you can reserve some cream in a piping bag fitted with a star tip and pipe the cream around the edge.
- Briefly heat the Biscoff cream until it becomes liquid (e.g., in the microwave), let it cool slightly, and pour it over the cinnamon cream.approx. 50 g Biscoff spread
- Place the second layer of cinnamon cake on top of the cream.
- Spread the remaining cream over the top of the cake.
- You can also now sprinkle the top of the cake with crumbs from the trimmed cake.
- After preparation, it’s best to chill the cake for about 2 hours in the refrigerator for the flavors to “meld”, but you can also serve it immediately.

Cinnamon cake with cream – notes
This cinnamon cake with cinnamon cream I prepared for New Year’s Eve, and I must say it tasted delicious. As a base for the cinnamon cake, I used Victoria sponge recipe. Victoria sponge is a buttery sponge cake prepared with equal amounts of butter, flour, and sugar. Such a sponge cake is super fluffy and at the same time stays fresh for a long time and dries out less than a traditional fat-free sponge cake. I also wanted the cake to be very moist and not to become hard when stored in the refrigerator (which unfortunately happens with butter-based sponge cakes). That’s why I replaced butter with oil in the recipe, and it was a perfect choice! Cinnamon cake with oil turned out super fluffy and incredibly moist. And being in the refrigerator did not affect the softness of the cake at all. That’s why I recommend this recipe and strongly encourage you to try it and save it for later!

What ingredients are necessary to prepare a cinnamon cake?
To prepare this cake, you will need a few basic ingredients. Below is a condensed list of the products I used and possible substitutes.
- oil – I added 200 ml of rapeseed oil to the cake – you can also use another oil with a neutral and delicate taste, or ultimately, melted and cooled butter, or vegetable butter
- mascarpone cheese – this is an Italian creamy cheese that you can easily find in any Biedronka or Lidl, and of course, in any large supermarket
- whipping cream – for the cream, I used liquid whipping cream in a carton with 30% fat content (mine was Łaciata, but any brand will do), you can replace it with 36% cream – but then the cake’s calorie content will slightly increase
- Biscoff cream – to enhance the flavor and add a touch of sweetness, I spread some Biscoff cookie cream over the cinnamon cream. Unfortunately, this cream is never available in regular sales. It sometimes appears in Dealz or Carrefour, and you can also easily buy it on Allegro. If you want to add something to the cake and don’t have Biscoff cream, you can add caramel sauce – you can make a quick homemade caramel sauce or use chocolate cream – e.g., Nutella. Of course, you can completely forgo this addition and make the cake with just cinnamon cream.

How to streamline the preparation of cinnamon cake?
If you want to streamline the cake preparation, I suggest baking the cinnamon cake a day in advance. This way, it can cool down peacefully overnight. Such a pre-baked cake is also better and easier to work with. It cuts into layers more nicely.
To ensure that preparing the cinnamon cream for the cake causes no problems, you must have well-chilled products – mascarpone cheese and whipping cream. The bowl you will be mixing in must be dry – without any traces of water. When it’s hot outside, I recommend chilling the bowl and the mixer beaters in the refrigerator beforehand as well – thanks to their chilling, mixing the cream will be even faster.

How to decorate a cinnamon cake?
I opted for a very simple decoration here, where the main role was played by cinnamon cream piped around the perimeter of the cake using a star-shaped nozzle. A few crumbs from the trimmed cake, and that’s it. I believe that strength lies in simplicity, and not much more is needed here.
If you want a more decorative cake, you can add grated chocolate or chocolate decorations on top, or small and pretty cinnamon cookies.
