  • 360 ml Greek yogurt
  • 2 eggs (size L)
  • 120 ml oil
  • 2 tablespoons lemon juice
  • 150 g sugar (or to taste – ¾ cup)
  • 300 g all-purpose flour (2 cups)
  • 2 teaspoons baking powder
  • approx 300 g fruit (2 cups – I used frozen)

How to make moist muffins with fruit step by step

    Step 1 – Preparations

    • Preheat the oven to 170℃ (fan-assisted) or 180℃ (top/bottom heat mode).
    • Prepare a muffin baking tin – I lined it with paper cases about 5 cm high – in total, I got 17 muffins.
    • Combine the flour with the baking powder.

    Step 2 – Preparing the muffin batter

    • In a large bowl, place the yogurt, eggs, oil, lemon juice, and sugar.

    • Whisk with a kitchen whisk until smooth.

    • Add the flour with baking powder to the bowl and mix with a spoon – just until combined!

    • The batter will be quite thick, and try not to overmix it!

    • Add the fruit to the bowl – if you have frozen fruit, do not thaw it beforehand – and mix with a spoon.

    • Spoon the batter into the prepared paper cases – ideally up to a maximum of 2/3 full.

    Step 3 – baking lemon muffins with fruit

    • Place the mold in the preheated oven and bake for about 25 minutes – until a toothpick comes out clean.

    I recently needed something sweet for my daughter and her friends (the girls didn’t feel like my poppy seed cake – shock and disbelief ;)). So I did a quick review of TikTok and baked these simple, moist muffins with fruit. The muffins turned out fantastic and my daughter loved them! They have many advantages – they are quick to prepare (you can make them even without a mixer), they require only a minimal amount of ingredients, and very common ones at that, you can make them with any fruit – even frozen ones (and you don’t need to thaw them beforehand!). You absolutely must try this recipe!

    What ingredients are needed to bake muffins with fruit?

    To make such moist muffins perfect for a sweet breakfast, snack, or dessert at home, you will only need 8 ingredients. Below is a condensed list of the products I used and possible substitutes.

    • Greek yogurt – I used thick yogurt; you can substitute it with thick natural yogurt or skyr. Optionally, it can be buttermilk or kefir, but then use less of them than stated in the recipe so that the batter is not too thin.
    • lemon juice – you can also use so-called “lemon essence” here. If you don’t have lemons or lemon essence, you can add your favorite flavor to the batter for taste – it can be lemon, vanilla, orange, or any other.
    • fruit – I used frozen mixed fruit – I mainly had strawberries, blueberries, and currants there. You can use any fruit – whatever you have at home. Measure about 2 cups of fruit and add it to the mixed batter.

    How to prepare muffins so they turn out well?

    Remember to not overmix the batter! Overmixing the batter can lead to the muffins being tough after baking! So, stop mixing when all the flour is combined with the wet ingredients.

    These muffins rise a bit during baking, so try not to overfill the cupcake liners. Fill the batter to about 2/3 of the height. I overfilled some liners, and the batter spilled a bit to the sides. This doesn’t affect anything, and the muffins taste amazing.

    How to store lemon muffins with fruit?

    After baking and cooling, transfer these muffins with frozen fruit to an airtight container. This will help them stay fresh and moist for longer. In winter and autumn, muffins can safely be kept at room temperature. If you bake muffins in summer and it’s hot and humid, it’s worth storing any uneaten fruit muffins in the refrigerator after 2-3 days to prevent them from spoiling.

    You can also freeze lemon muffins with fruit for about 3 months.

    How many calories do moist lemon muffins have?

    In the table below the recipe, I provided the calorie count for one of my muffins (assuming 17 finished muffins). However, you might get a different number, so below I provide the calorie count for 100 g of finished muffins – 100 g of muffins will have approximately 270 kcal (carbohydrates – 35.5 g, proteins – 7 g, fats – 11 g).
