How to make Melba no-bake cheesecake step by step
Step 1 – how to make raspberry and peach fruit filling
- Transfer raspberries to a saucepan, cut peaches into larger cubes and add them to the raspberries.250 g raspberries, approx 300 g peaches
- Add sugar and water and bring to a boil until the fruit softens and releases juice.50 g sugar, approx 50 ml water
- Mix potato starch with water.3 teaspoons potato starch, approx 60 ml water
- Add it to the hot fruit and stir continuously while cooking until the fruit mixture thickens.
- Then set it aside to cool.
Step 2 – how to make the biscuit base
- Blend the ladyfingers into a fine powder – I do this with a food processor, you can also crush them very thoroughly.approx 130 g biscuits
- Add butter to the powdered ladyfingers and mix.approx 65 g butter
- Line the baking pan with parchment paper.
- Pour in the biscuits with butter and thoroughly press them into the entire bottom.
Step 3 – how to make no-bake cheesecake
- Cover the gelatin with cold water and set aside for a few minutes to swell.6 teaspoons gelatin, 120 ml water
- Whip the heavy cream on high speed until you get thick whipped cream.250 ml heavy cream
- Transfer the quark and sugar to a large bowl and blend until combined.1 kg cream cheese for cheesecakes, 200 g sugar
- Briefly heat the gelatin until it becomes liquid.
- Add two tablespoons of the quark mixture to it and mix thoroughly.
- Pour the gelatin into the rest of the cheesecake mixture and blend thoroughly.
- Add the whipped cream to the quark and gently fold it in with a spatula.
- Transfer the cheesecake mixture to the mold and smooth the surface.
- Spoon a few tablespoons of fruit topping onto the cheesecake and gently mix it with the cheesecake.
- Spread out the rest of the fruit topping.
Step 4 – how to chill Melba cheesecake
- Place the cheesecake in the refrigerator for about 3-4 hours – until completely set.

No-Bake Cheesecake with Raspberries and Peaches – notes
My Melba cheesecake today is inspired by the famous Melba dessert – specifically Peach Melba. This dessert, invented by a French pastry chef in honor of the Australian opera singer Nellie Melba, consists of ice cream combined with a fruit sauce. The fruit sauce was made with peaches and, alternatively, either raspberries or strawberries. Here I used delicious raspberries and ripe peaches. Slightly tart fruits create a perfect duo with the light and creamy no-bake cheesecake. Additionally, such a no-bake cheesecake with fruit filling looks wonderful, so you can also prepare it for special occasions – like holidays or various family celebrations. What ingredients are necessary to make cheesecake with raspberries and peaches?
To make such a raspberry and peach dessert you will need a few basic ingredients. Below I list the products I used and possible substitutes.
- raspberries – I used frozen fruit here (no need to thaw them beforehand), because I couldn’t get fresh fruit; such frozen raspberries will be excellent for use even out of raspberry season
- peaches – for me, these are 4 medium fruits, I sliced them with the skin on; you can use any peaches, but riper and sweeter ones will be better; out of season, you can use canned peaches
- cream cheese – for me, it’s low-fat quark cheese for cheesecakes in a tub from Lidl (Pilos brand); you can also use other quark cheese for cheesecakes
- whipping cream – I used 250 ml of 30% UHT whipping cream; you can also use 36% cream – but this will slightly change the calorie content of the cheesecake
- gelatin – I used powdered gelatin type 180 Bloom

How to make a crust for a no-bake fruit cheesecake?
For the cheesecake crust, I chose plain ladyfingers, which I ground into a powder and mixed with melted butter. This created a nice and even base for the cheesecake. If you don’t have ladyfingers, you can substitute them with plain biscuits – grind them too and mix with butter. If you can’t grind the cookies, you can arrange them directly on the bottom of the mold (without adding butter) and gently pour the cheesecake mixture over them – do this so that the cookies don’t start to “float”.

How many calories does no-bake Melba cheesecake have?
In the table below the recipe, I provided the calorie content for 100 g of cheesecake with fruit filling (using the products I used). If you cut the cheesecake into 12 roughly equal portions, each slice will have approximately 355 kcal (carbohydrates – 40 g, fats – 15 g, proteins – 17 g). If you use a different type of quark cheese (e.g., fattier Piątnica), the calorie content of the cheesecake will also change.
