Today I invite you to try a delicious and very simple to prepare party raspberry cake. Why ‘party’? Because it’s perfect for special occasions – such as New Year’s Eve, birthdays, name days, or other family gatherings. What’s more, this is a no-bake cake, prepared on ladyfingers, so you don’t even have to turn on the oven! And the taste of the slightly tart raspberry mousse wonderfully complements the white chocolate cream and white chocolate glaze. Be sure to try this recipe and save it for later!

How to make no-bake raspberry cake step by step

    Step 1 – preparations

    • Line the baking pan with parchment paper so that it extends a few centimeters above the rim.
    • Arrange a single layer of ladyfingers on the bottom.

    Step 2 – preparation of raspberry mousse

    • Whip the heavy cream until thick.

    • Dissolve the gelatin thoroughly in hot water.

    • Add the raspberry filling and mix thoroughly – check the temperature – if the mixture is lukewarm, you can add the whipped cream; if it’s warmer, let it cool down.

    • Add the whipped cream and gently mix until combined.

    • Transfer the raspberry mixture to the mold.

    • Arrange the second layer of sponge fingers on the mousse, gently pressing them into it.

    Step 3 – preparation of white chocolate cream

    • Break the chocolate and melt it – I melted it in a bain-marie (water bath) – leave to cool slightly – to room temperature.

    • Transfer the mascarpone cheese to a taller bowl and briefly whip with a mixer on high speed.

    • Add the cooled chocolate and mix until combined.

    • Pour in the heavy cream and whip the mixture until you get a thick and fluffy cream.

    • Transfer the cream into the mold with raspberry mousse and level the surface.

    • Arrange the third layer of biscuits, pressing them lightly into the cream.

    • Place the cake in the refrigerator while preparing the glaze.

    Step 4 – preparation of chocolate glaze

    • In a saucepan, heat the cream; when hot, add the broken chocolate.
      70 ml heavy cream, 100 g white chocolate

    • Stir until the chocolate melts and you get a smooth glaze.
    • Set aside to cool.
    • Pour the cooled glaze over the cake.

    • Place the cake in the refrigerator for about 6 hours – or preferably overnight.
    • Before serving, decorate the cake with chocolate shavings or colorful sprinkles.

    Cake with Raspberry Mousse and White Chocolate – Notes

    My cake today, prepared in cooperation with the culinary portal Życie ma smak, will be perfect for the upcoming New Year’s Eve. A light-tasting cake, not too sweet, and will taste great with a glass of champagne or prosecco. What’s more, this raspberry cake with white chocolate looks great, so placed on a dessert table, it will surely attract everyone’s attention :) You must try it!

    What ingredients are necessary to prepare the raspberry cake?

    To make this cake, you will need a few essential ingredients. Below I list the products I used and possible substitutes.

    • raspberries – I used Helcom (Helcom Easy Cook) raspberry filling for desserts here – you can buy it, for example, in the Athina online store
    • white chocolate – you will need a total of 200g of chocolate for the cake; half is for the mascarpone cream, and half for the frosting on top of the cake. However, if you want a thicker layer of frosting, you can make it with a double portion. When buying chocolate, pay attention to its weight, as manufacturers often reduce the weight of white chocolate.
    • heavy cream – I used a total of 470 ml of heavy cream in the recipe – so buy a half-liter package. I used 30% cream in a carton here.
    • mascarpone – this is an Italian creamy cheese that you can easily buy in popular discount stores and large supermarkets.
    • ladyfingers – I used elongated ladyfingers, like for tiramisu, but you can also use traditional round ones.

    Raspberry Cake with White Chocolate – Tips

    If you have little time for the cake to “set” – although at least four hours in the fridge is the minimum – you can lightly soak the ladyfingers, e.g., with sugar water. This will make them softer faster, and the cake will be easier to slice. After a night in the fridge, the ladyfingers will naturally soften from the creams, so soaking them is not necessary then.

    You can additionally decorate the cake with, for example, grated white chocolate. To make such chocolate shavings, simply “peel” the white chocolate with a slotted knife. You can also grate it on a coarse grater.

    How many calories does raspberry cake with chocolate have?

    In the table below the recipe, I provided the calorie count for 100g of the cake (using the products I used). If you divide the cake into approximately 15 equal portions, each will have about 390 kcal (carbohydrates – 44g, proteins – 5g, fats – 22g). It is therefore a slightly more caloric cake, so it’s worth dancing after consuming it ;)

    How to store party raspberry cake?

    The cake is best stored in the refrigerator. It can also stay out for a while during a party. The cake is not very suitable for freezing, so it’s best to eat it right away.
