Bake amazing soft cinnamon cookies with me today. These American-style cookies are very simple and quick to make, and will appeal to both children and adults. Thanks to being coated in cinnamon sugar before baking, the cookies are nicely crispy on the outside and soft on the inside. - 200 g butter
- 200 g sugar (1 cup)
- 2 eggs (size L)
- 0.5 teaspoon vanilla extract (optional)
- 350 g all-purpose flour (2 and ⅓ cups)
- 1 tablespoon potato flour (starch)
- 2 teaspoon baking powder
- 0.5 teaspoon salt
- 1 teaspoon cinnamon

How to make cinnamon cookies with browned butter
Step 1 – preparations
- Cut the butter into pieces, transfer to a saucepan and melt.200 g butter
- Heat until the butter starts to darken and turns brown.
- Add sugar, mix and set aside to cool.200 g sugar
- Preheat the oven to 180 degrees (top/bottom).
Step 2 – preparing cinnamon cookies
- Into a large bowl, sift wheat flour, potato flour, baking powder, salt, and cinnamon through a sieve.350 g all-purpose flour, 1 tablespoon potato flour, 2 teaspoon baking powder, 0.5 teaspoon salt, 1 teaspoon cinnamon
- Add eggs one by one to the cooled butter, mixing thoroughly after each addition.2 eggs
- Add vanilla – if using, and mix.0.5 teaspoon vanilla extract
- Pour the wet ingredients into the dry ingredients.
- Mix briefly with a mixer, or stir with a spoon – the mixture will be quite thick.
- Chill the cookie dough in the refrigerator for an hour to firm it up.
Step 3 – forming cinnamon cookies
- Scoop heaped portions of dough with a teaspoon.
- Roll them into balls in your hands – mine were the size of a large walnut.
- In a bowl, mix sugar and cinnamon together and coat each ball.50 g sugar, 1 teaspoon cinnamon
- Arrange the cookies on a large baking sheet lined with parchment paper – I got 27 cookies and baked some of them on a second sheet.
- Bake in a preheated oven for about 12 minutes.
- Immediately after baking, the cookies are still very soft – do not remove them from the baking sheet right away, but let them cool for a moment. Then they will become crispy on top.

Soft cinnamon cookies – notes
Recently, I’ve been testing various TikTok recipes sent to me by my daughter. Previously, I made Apple Pie muffins, which turned out to be a hit, and today I have a recipe for soft cinnamon cookies from @majasrecipes. I made the cookies and I must admit they are delicious – maybe a tiny bit too sweet for me, but only a tiny bit. I packed the cookies for my daughter’s school and her friends were also delighted, and I even heard that they were the best thing they had ever eaten :)
I think that’s enough encouragement, and you’ll test this recipe too!

What ingredients are needed to prepare cinnamon cookies?
To make these cookies, you’ll need a few basic ingredients that you probably already have at home. And since the cookies are quick to make, you can bake them at any time. See what products I used and what you can possibly substitute them with.
- butter – the base of these cookies is browned butter, so opt for extra butter with 82% fat content here
- wheat flour – it can be type 450, 500 or possibly type 550 – any all-purpose flour will be good, but I think you can also try other light flours here, such as spelt flour
- cinnamon – ground cinnamon is used for the cookie dough and for coating; if you don’t have it, or don’t like its taste, you can use gingerbread spice instead, or skip the spices and add a little aroma or citrus zest to the dough – then use only sugar for coating

What is browned butter?
Browned butter is nothing more than butter heated for longer. Initially, after melting, the butter will start to foam, and over time the foam will disappear, and the butter will take on a darker color with dark specks appearing in it. Such browned butter acquires a slightly nutty taste and aroma.

How to store browned butter cookies?
Cinnamon cookies, after baking, cool them thoroughly and only then transfer them to an airtight container with a lid. In such a container, the cookies will not harden and will stay fresh longer. These soft cookies are not meant for long-term storage – they taste best in the first week after baking. They are still tasty afterwards, but they will become increasingly dried out and slightly harder.
