How to Make Choux Pastry?
Choux Pastry has a few preparation stages.
First, we start by heating butter and water.
Then, we add the sifted flour and “scald” it (cook it out) — stir until a smooth mass forms that pulls away from the sides of the pot.
We cool the mixture, and then we add the eggs.
Choux Pastry prepared this way is neutral in flavor — we don’t add any sugar.
After baking or frying, it rises strongly, creating large, hollow pockets inside.
This type of choux pastry is the base for the famous Karpatka, and it is used for cream puffs and éclairs.
The famous Spanish Nests (Gniazda Hiszpańskie) are also prepared using choux pastry.
