Recipe for quick almond cookies with marzipan
Today I invite you to try delicious and very simple to prepare marzipan cookies with chopped almonds. To bake these cookies, I used a chocolate-covered marzipan bar. Thanks to it, the cookies gained a fantastic flavor, and the almonds added crunchiness. ingredients for marzipan cookies
- approx 170 g marzipan (mine is chocolate-covered)
- 100 g butter (soft)
- 100 g powdered sugar (2/3 cup)
- 1 egg (size L)
- 175 g wheat flour – all-purpose (1 cup and 2 slightly heaped tablespoons)
- 1 teaspoon baking powder
- approx 30 g almonds (chopped)

How to make marzipan cookies step by step
Step 1 – preparations
- Line a large baking sheet from the oven with parchment paper.
- Preheat the oven to 170 degrees (fan-assisted) or 180 degrees (top/bottom heat mode).
Step 2 – preparing the cookie dough
- Mix the flour with baking powder.175 g wheat flour – all-purpose, 1 teaspoon baking powder
- Cut the marzipan into slices – mine were about 0.5 cm thick – cut them to get about 15-16 pieces.approx 170 g marzipan
- Beat the butter with sugar until light and fluffy – I beat it for a few minutes on high speed with a mixer.100 g butter, 100 g powdered sugar
- Add the egg to the butter and mix briefly.1 egg
- Add the flour to the butter in portions, continuously mixing on low speed with a mixer.
- Stop mixing when you still see remnants of flour and mix them in with a spoon.
- If you have time, put the bowl with the dough in the fridge to let the dough chill slightly.
Step 2 – forming the cookies
- Scoop portions of dough with a teaspoon and roll them into walnut-sized balls in your hands – if you don’t chill the dough, it might be slightly sticky. In that case, lightly dusting your hands with a little flour helps.
- Arrange the cookies on a baking sheet, leaving space between them – they will spread during baking.
- Place a slice of marzipan on each cookie and press it down lightly.
- Finally, sprinkle the cookies with chopped almonds.approx 30 g almonds
Step 3 – baking marzipan cookies
- Bake the cookies in a preheated oven for about 12 minutes – until lightly browned.
- Immediately after baking, the cookies will still be soft. If any have stuck together during baking, cut them apart with a knife now.
- As they cool, the cookies will become harder and crispier.

Marzipan Almond Cookies – notes
During our short holiday trip to Berlin, I bought a large chocolate-covered marzipan bar there. The poor thing just lay there and lay there, and somehow no one got around to eating it. Finally, I decided to use it somehow and baked these simple cookies. I must admit that the result exceeded my expectations. Marzipan cookies turned out nicely crunchy and subtly almond-flavored. And the chocolate-covered marzipan softened during baking, and its flavor was further enhanced. Such marzipan cookies are a perfect addition to a cup of hot tea or coffee – especially on colder days. Be sure to try them!

What ingredients are necessary to bake marzipan cookies?
To bake these cookies, you will only need a few basic ingredients. Below is a condensed list and possible substitutes.
- marzipan – in my case, as I wrote earlier, it’s chocolate-covered marzipan. Mine was large and weighed 175 g. You can also use plain marzipan – cut it into pieces and place it on the cookies.
- almonds – in my case, these are whole almonds with skin – I coarsely chopped the whole almonds and sprinkled them over the cookies. You can also use flaked almonds – in that case, don’t chop them.
- butter – I used extra butter with 82% fat content; you can optionally use good quality vegetable butter.
- sugar – I used powdered sugar because I prefer it in creamed cakes. If you don’t have powdered sugar, you can use regular sugar; use 100 g of sugar, or if you prefer cup measurements, use half a cup of granulated sugar.

How to diversify the flavor of marzipan cookies?
If you want to enrich the flavor of the almond cookies, you can add some chopped chocolate to them – add the chocolate to the dough and only then roll them into balls. You can also add some chopped almonds to the dough instead of or in addition to the chocolate.

How to store marzipan cookies?
After baking, cool the cookies on a baking sheet. Once they reach room temperature, transfer them to an airtight container. This will prevent them from drying out and keep them fresh longer. It’s best to eat this type of cookie relatively quickly – within a week. That’s when they are most delicious.
