Recipe for Toffee Candy and Apple Cake
Bake with me today a very simple yet incredibly delicious creamed toffee apple cake. This cake contains a surprise in the form of chopped toffee candies, which gently melt and even slightly caramelize during baking, giving the cake a unique flavor. After baking, I additionally decorated the cake with mascarpone cream and caramel sauce. The whole thing turned out delicately sweet, moist, and delicious! You must try it!

- 125 g butter (soft)
- 150 g brown sugar (¾ cup)
- 2 eggs (size L at room temperature)
- 250 g wheat flour (1⅔ cups)
- 2 teaspoons baking powder
- approx 200 g apples
- approx 100 g fudge candies (or soft toffee)

- 100 g mascarpone cheese (cold)
- 50 ml heavy cream (cold – mine was 30%)
- approx 30 g caramel sauce (or to taste)

How to make toffee fudge cake step by step
Step 1 – preparation
- Line the baking pan with parchment paper or grease with butter and sprinkle with breadcrumbs or wheat flour.
- Preheat the oven to 160 ℃ (fan-forced) or 170 ℃ (top/bottom heat mode).
- Cut the apple in half, remove the core, and dice the fruit into small cubes.approx 200 g apples
- Cut the candies into smaller pieces.approx 100 g fudge candies
Step 2 – Preparing the creamed sponge batter
- Beat the butter and sugar together on high speed—I mixed mine for several minutes.125 g butter, 150 g brown sugar
- Mix the all-purpose flour with the baking powder.250 g wheat flour, 2 teaspoons baking powder
- Add the eggs to the batter one by one, along with a tablespoon of flour—mix briefly, only until the ingredients are combined.2 eggs
- Add the rest of the flour in batches and mix on low speed—only until combined—do not overmix!
- Add the chopped fudges and the apple to the batter—stir with a spoon—the batter will be thick.
- Transfer the batter into the prepared baking tin.
Step 3 – baking the cake
- Place the tin in the preheated oven and bake for about 50–60 minutes—or until a toothpick comes out clean.
- After baking, let the cake cool down.
Step 4 – preparing the cream for the cake
- Blend mascarpone cheese and cold heavy cream together on high speed for about 2 minutes.100 g mascarpone cheese, 50 ml heavy cream
- Add caramel sauce and gently mix.approx 30 g caramel sauce
- Spread the cream over the cake – you can also drizzle the cream with caramel sauce.

Toffee Candy and Apple Cake – Notes
My cake today, a combination of apples and sweet toffee candies, is a perfect idea for a sweet cake with coffee or tea. The toffee candies in the cake caramelize nicely – especially those pieces that are close to the edges and sides of the cake. Apple pieces provide nice moisture to the cake and help it stay fresh for a long time. In my opinion, the cake has one flaw – it disappears too quickly ;) It turns out that when baked in a loaf pan, it’s definitely too small – so you can bake two such cakes at once, or make a larger batch in a bigger pan :) And for this recipe, I was inspired by a cake found on the Olive magazine website – although I’m presenting my slightly modified version here.

What ingredients are needed to prepare the toffee candy cake?
To bake the cake (especially without cream on top), you will only need a few basic ingredients that you probably already have at home. Below are the products I used and possible substitutes.
- butter – I used extra butter with 82% fat content, you can optionally substitute it with vegetable butter or a butter mix.
- cane sugar – you can replace it with regular sugar, or powdered sugar, it can also be xylitol or erythritol.
- fudge candies – I used Wawel fudge candies, but you can use any kind; soft ones will be better, but harder ones will also work.
- apple – one large, or two smaller ones – mine weighed 200 g, and after removing the core, about 180 g – I added the apple with the skin to the cake, because it is more nutritious.
- mascarpone – this is an Italian cheese that you can get in every Lidl, Biedronka, and larger stores, but you can substitute it with quark for cheesecakes.
- caramel sauce – I used a store-bought one, but you can prepare homemade caramel sauce – you can then add a pinch of salt to it – this will give the cake a nice flavor :)

How to store toffee cake with apples?
Despite the cream, the cake can last for about two days at room temperature – as long as it’s not too hot in the apartment. It’s best to cover it with a cake dome or store it in an airtight container with a lid. If the cake is to last longer, it’s worth putting it in the refrigerator. Cake without cream can stand at room temperature for several days.
You can also freeze the toffee cake (preferably without cream) for about 3 months.
