- 3 egg yolks ( from L eggs)
- 3 egg whites
- 150 g sugar (¾ cup – or to taste)
- 100 g oil (½ cup)
- 100 g chocolate (dark – melted)
- 100 g all-purpose flour (⅔ cup)
- 2 teaspoons baking powder
- 140 g walnuts (ground – 1⅓ cups)

How to make Torta di Noci walnut cake step by step
Step 1 – preparations
- Grease the baking pan with butter and dust with flour or breadcrumbs – you can also line it with baking paper.
- Preheat the oven to 180 ℃ (top/bottom heat) or 170 ℃ (fan-assisted).
- Grind the walnuts – some slightly larger pieces may remain, which will add crunchiness.140 g walnuts
- Melt the chocolate (e.g., in a bain-marie) and let it cool.100 g chocolate
Step 2 – preparing the nut dough
- Transfer the egg yolks to a bowl with sugar and beat them at high speed until pale and fluffy.3 egg yolks, 150 g sugar
- Pour the oil into the egg yolks and mix briefly.100 g oil
- Add the cooled chocolate and mix briefly.100 g chocolate
- Mix the flour with the baking powder.100 g all-purpose flour, 2 teaspoons baking powder
- Add the flour to the bowl with the dough and mix on low speed – just until combined.
- Add the ground nuts and mix briefly – the mixture will be thick.
Step 3 – preparing the egg whites
- Whisk the egg whites on high speed until you get a thick, white, and stable foam.3 egg whites
- Add about half of the egg white foam to the dough and gently mix with a spoon.
- Add the rest of the foam and gently mix.
Step 4 – baking the cake
- Transfer the dough to the prepared mold and place in the oven – bake for about 30 minutes – until a skewer comes out clean.
- After baking, cool the cake, and before serving, sprinkle with powdered sugar.

I love walnuts and dark chocolate, so when I saw the recipe for Italian Torta di Noci cake with these ingredients, I knew I had to bake it :) The recipe itself is incredibly simple and quick to make, and the cake bakes quickly, so in less than an hour you can have a ready, aromatic walnut cake perfect with coffee!
And if you like Italian cakes and desserts, then you must also bake ricotta cake – delicious and great even for breakfast!

What ingredients are essential for baking walnut cake?
To prepare Torta di Noci cake, you only need a few basic ingredients. Below is a condensed list of products I used and possible substitutes.
- walnuts – you can also replace them with hazelnuts – also grind them well before adding them to the dough
- chocolate – I used dark chocolate and the cake was not too sweet; if you prefer sweeter cakes, you can use milk chocolate
- oil – I used rapeseed oil, but you can also use another oil with a mild flavor
- all-purpose flour – any flour will be good

How to melt chocolate for cake?
You can melt chocolate for the cake in two ways – I melted it in a bain-marie (water bath), but you can also use a microwave.
How to melt chocolate in a bain-marie (water bath)?
To melt chocolate this way, you need a smaller pot and a heat-resistant bowl (e.g., metal) – the bowl must be sized so that it doesn’t fall into the pot but rests on its edges.
Pour about 2-3 cm of water into the bottom of the pot and bring it to a boil. Place the bowl with broken chocolate inside on top of the pot. Heat the chocolate this way (it will warm up from the steam) until it is completely melted. Then remove the bowl and set it aside to cool for a moment.

How to melt chocolate in the microwave?
Break the chocolate and transfer it to a bowl; you can add a little oil (the one used in the recipe) to it. Heat in the microwave for one minute – remove and stir. If there are still unmelted pieces, heat for another 30 seconds and stir again. If necessary, heat for another 30 seconds. Cool the melted chocolate before adding it to the dough.

How many calories does nut cake with chocolate have?
In the table below the recipe, I provided the caloric value for 100 g of cake, but if you cut it into 12 roughly similar pieces, each of them will have around 291 kcal (carbohydrates – 26 g, proteins – 5 g, fats – 19 g).

How to store Italian Torta di Noci cake?
After cooling, it’s best to cover the walnut cake with a cake dome or transfer the entire cake to an airtight container with a lid. This will keep it fresh longer and prevent it from drying out as much. You can also freeze the cake for about 3 months.
