This cake with pudding and whipped cream is made in a large pan, so it’s perfect for holidays and various family celebrations. Here, I replaced the classic 3 Bit cake on biscuits with a sponge cake. - 6 egg whites (from size L eggs)
- 6 egg yolks
- 150 g sugar (3/4 cup)
- 150 g wheat flour – all-purpose (1 cup)
- 50 g potato starch (3 heaped tablespoons)

- 1 liter milk
- 3 packages vanilla pudding (or cream-flavored – each for half a liter of milk)
- sugar (for the pudding – as indicated by the manufacturer on the packaging)
- 150 g butter (soft – at room temperature)
additional ingredients
- 1 can dulce de leche mass (approx. 500 g)
- 500 ml heavy cream (well chilled)
- 3-4 tablespoons powdered sugar
- chocolate sprinkles (or grated chocolate)

How to make 3 bit cake on sponge cake step by step
Step 1 – bake the sponge cake
- Preheat the oven to 170 degrees (fan-assisted) or 180 degrees (top/bottom heat mode).
- Sift both flours through a sieve.150 g wheat flour – all-purpose, 50 g potato starch
- Beat the egg whites for the sponge cake together with sugar until a very thick, fluffy and white mixture is formed – I beat for a few minutes at the highest speed of the mixer.6 egg whites, 150 g sugar
- Add the egg yolks to the beaten egg whites and briefly mix on the lowest speed of the mixer.6 egg yolks
- Add the flour in portions and briefly mix on the lowest speed of the mixer or gently stir with a spoon.
- Line the bottom of the baking pan with baking paper, and leave the sides empty.
- Pour the sponge cake batter and level the surface.
- Bake the sponge cake for about 20 minutes – until a dry stick comes out.
- After baking, cool the sponge cake well.
Step 2 – Prepare the pudding for the cream
- From one liter of milk, pour off about a glass of milk.1 liter milk
- Dissolve three puddings in the reserved milk – if you have sugar-free pudding, add as much as the manufacturer recommends.3 packages vanilla pudding, sugar
- Boil the remaining milk in a large pot.
- Pour the mixed pudding into the hot milk and cook over low heat (stirring constantly) until you get a thick pudding.
- Immediately cover the hot pudding with foil, so that it touches the surface of the pudding.
- Leave it to cool at room temperature – do not put it in the refrigerator or a cold place!
Step 3 – Prepare the pudding cream
- Transfer the softened butter to a large bowl.150 g butter
- Beat it on the highest speed of the mixer until the butter visibly fluffs up, increases its volume, and becomes almost white – I usually beat it for about 10 minutes.
- To the whipped butter, add the room temperature pudding one spoonful at a time and mix briefly – just until combined.
Step 4 – Assembling the 3-bit cake
- Slice the cooled sponge cake into two layers.
- Place the bottom layer back into the baking pan (along with the baking paper).
- Spread its surface with dulce de leche.1 can dulce de leche mass
- Pour the pudding cream over the dulce de leche and level the surface.
- Cover the cream with the second cake layer.
Step 5 – Prepare the whipped cream
- Whip the cold heavy cream with powdered sugar on high speed until the cream is thick and stable.500 ml heavy cream, 3-4 tablespoons powdered sugar
- Spread the cream on top of the sponge cake.
Step 6 – Chill the cake
- Place the cake pan in the refrigerator – preferably overnight – so that the butter added to the pudding thickens the cream.
Step 6 – decorate the 3bit cake
- Before serving, sprinkle the top of the cake with confectioners’ sugar.chocolate sprinkles
- You can also grate dark or milk chocolate and sprinkle it over the whipped cream.

3 Bit on Sponge Cake – notes
This 3bit cake with pudding cream and dulce de leche is very popular, even though the recipe itself is quite “old-fashioned”. Traditionally, this cake is made without baking, using crisp biscuits to form the layers. A lot of biscuits are needed to prepare the cake, so the cake itself is quite caloric. If you fancy this cake but prefer a recipe with fewer calories, preparing it on a sponge cake will be an excellent idea. Sponge cake itself is much less caloric than biscuits because it contains no fat. Additionally, it’s light and fluffy, which gives the cake a slightly different character. I highly recommend preparing 3bit cake on a sponge base – especially since it’s a recipe for a large baking sheet, so the cake can be divided into many portions :)

Ingredients necessary for preparing 3bit cake and substitutes
To make this cake, you will need a few basic ingredients. Below is a condensed list of the products I used and possible substitutes.
- pudding – you need vanilla or cream-flavored pudding here; to prepare the cake for a large baking sheet, you need 3 packages of pudding, each for half a liter of milk. My pudding already contained sugar (3 packs of 60 g each), so I didn’t add sugar during cooking. If you have plain pudding, add as much sugar as the manufacturer indicates on the package – e.g., 3 times 2 tablespoons.
- milk – I used 1.5% UHT milk; you can use milk with a different fat content, or even a plant-based drink.
- dulce de leche – mine is dulce de leche from a can from Gostyń – the can has 510 g. You can use any dulce de leche, but you will need about 450-500 g of it.
- whipping cream – for the whipped cream on top of the cake, I used liquid cream in a carton with 30% fat content. You can also use 36% cream – in which case the cake’s calorie content will increase slightly.

Can you make 3-bit cake with ‘Karpatka’ cream?
Yes. If you have ‘Karpatka’ cream at home, or you like the taste of ‘Karpatka’ cream, then instead of preparing traditional pudding, you can make ‘Karpatka’ cream and spread it on the cake. I made the cream from one liter of milk and three puddings, to which I added 150 g of soft butter. When buying ‘Karpatka’ cream, make sure that after preparing it, you have a roughly similar amount of finished cream. Prepare the ‘Karpatka’ cream for the 3-bit cake according to the instructions on the cream package.

How to store 3-bit sponge cake?
Due to the pudding cream and whipped cream, the cake must be stored in the refrigerator. Also, after preparation, put it in the fridge for a few hours – or preferably overnight. This way, the pudding cream will thicken, and the cake will be easier to cut into pieces.
The cake is not suitable for freezing.

How many calories does 3-bit sponge cake have?
In the table below the recipe, I provided the calorie count for 100 g of the cake – using the products I used. If you divide the cake into 24 roughly similar pieces, each will have approximately 254 kcal (carbohydrates – 35 g, fats – 9 g, proteins – 6 g). Such a relatively low calorie count for a cream cake results from using a low-calorie sponge cake and a large amount of pudding, which itself is not highly caloric.
