Recipe for simple and quick muffins with apples and streusel
Today I invite you to try very tasty and wonderfully moist Apple Pie muffins with streusel. You can prepare these muffins very quickly and with very basic ingredients. You can bake them in the morning and have them for a sweet breakfast, or pack them and take them to work or school. Apple Pie Muffins step-by-step recipe

- approx. 450 g apples (- 3 medium)
- 50 g sugar (1/4 cup)
- 1 teaspoon cinnamon
- 0.5 teaspoon nutmeg
- 1 tablespoon lemon juice
- 20 g all-purpose flour (1 heaping tablespoon)
- approx. 40-60 ml water
muffin batter ingredients
- 225 g wheat flour (1½ cups)
- 2 teaspoon baking powder
- 0.5 teaspoon salt
- 0.5 teaspoon cinnamon
- ¼ teaspoon nutmeg
- 150 g sugar (¾ cup – or to taste)
- 120 ml oil
- 1 egg (size L)
- approx 150 ml milk (to consistency)
- approx 150 g apple (1 large)

- 75 g all-purpose flour (½ cup)
- 50 g sugar (¼ cup)
- 50 g butter

How to make apple muffins step by step
Step 1 – Prepare the apple filling
- Peel the apples, cut them into quarters, remove the cores, and cut the fruit into smaller pieces.approx. 450 g apples
- Transfer the apples to a saucepan, add the remaining filling ingredients, and cook over low heat until the fruit softens slightly.50 g sugar, 1 teaspoon cinnamon, 0.5 teaspoon nutmeg, 1 tablespoon lemon juice, 20 g all-purpose flour, approx. 40-60 ml water
- Let the apples cool
Step 2 – Preparing the muffin batter

- Prepare a muffin tin – I lined mine with tall paper liners.
- In a large bowl, mix the dry ingredients for the muffins – simply stir them together with a spoon.225 g wheat flour, 2 teaspoon baking powder, 0.5 teaspoon salt, 0.5 teaspoon cinnamon, ¼ teaspoon nutmeg, 150 g sugar
- In another bowl, mix the oil with the egg using a fork.120 ml oil, 1 egg
- Add the oil mixture to the dry ingredients and stir with a spoon – you will get a thick, lumpy batter.
- Gradually add the milk (I used 150 ml) and stir until you get a smooth, medium-thick batter.approx 150 ml milk
- Peel the apple, remove the core, and cut the fruit into small pieces.approx 150 g apple
- Add the apple to the batter and mix everything together.
- Spoon the batter into the prepared paper liners, filling each up to a maximum of 2/3 full – I got 11 muffins this way.
- Spoon the cooled apple filling on top – about 1 heaping tablespoon per muffin.
Step 3 – Prepare the crumble for the muffins
- Place the ingredients for the crumble into a bowl.75 g all-purpose flour, 50 g sugar, 50 g butter
- Rub them together with your fingers, or mash with a fork until you get crumbly pieces.
- Sprinkle the crumble over the tops of the muffins.
Step 4 – Baking the apple muffins
- Place the muffins in the preheated oven and bake for about 20–25 minutes, until a toothpick inserted into the center comes out clean.
- After baking, let them cool slightly, and you can serve them while still warm.

Muffins with apples and streusel – notes
Recently, my daughter Weronika and I were sitting around wondering what good thing we could bake to eat. I had a total blank, so I tasked her with coming up with something. Weronika delved into the depths of her TikTok inspirations, and that’s how we stumbled upon an Apple Pie muffin recipe. We both love apple bakes, so this recipe really appealed to us. I changed it a bit because the consistency of the dough and the amount of sugar added to the apples didn’t quite suit me during the process. This way, I present my slightly “improved” version :)

What ingredients are essential for preparing apple muffins?
Although the list of ingredients I provided in the recipe is long, most of them are repeated. Therefore, in the end, you only need a few basic ingredients to prepare the muffins. Below is a shortened list of products I used and possible substitutes.
- apples – in total, I used 4 apples for the muffins – they weighed 600 g before peeling and removing the cores. If you don’t have time or desire to prepare roasted apples, you can use ready-made filling – homemade or store-bought. In that case, add only that one apple to the batter. It’s not worth giving up this apple in the batter itself, as it adds a nice moisture to it.
- oil – I used rapeseed oil, but you can use any oil with a neutral and light flavor, it can also be coconut oil, you can also use melted and cooled butter
- milk – I used 1.5% UHT milk, you can use any other milk, as well as plant-based milk
- butter – for the crumble, I used 82% extra butter, you can also use other butter – e.g., a blend, or replace it with margarine or another plant-based butter
- egg – I added one egg to the muffins, if you want to make vegan apple muffins and are substituting the other ingredients with their plant-based equivalents, you can replace this egg with, for example, half a mashed banana

Can these muffins be made with other fruits?
Of course! If you don’t like apples or don’t have any, you can prepare the filling with other fruits in the same way. Pears or peaches, for example, would work great here. Other fruits – such as cherries or raspberries – may be juicier, so instead of wheat flour, it might be better to use potato flour, which will thicken the fruit juice produced during cooking more effectively.

How to store apple muffins?
Muffins that are not eaten immediately should be transferred to an airtight container with a lid. This will ensure their freshness and proper moisture for a long time. If you bake muffins on hot summer days and want them to stay fresh longer, you can store them in the refrigerator.
You can also freeze such apple muffins for about 3 months.
