If you like sweet yeast pastries and enjoy trying new flavors, then you absolutely must bake these Biscoff yeast crescent rolls.

- 300 g all-purpose flour (2 cups)
- 50 g sugar (¼ cup)
- 1 egg (large)
- 1 teaspoon instant yeast
- 125 ml milk (lukewarm)
- 40 g butter (softened)
- 8 teaspoons Biscoff spread

- 100 g white chocolate
- 50 ml heavy cream
- 1 tablespoon Biscoff cream (slightly heaped)

How to make Biscoff croissants step by step
Step 1 – preparing the yeast dough
- Add the dough ingredients to a large bowl – remember that the milk should not be too hot!300 g all-purpose flour, 50 g sugar, 1 egg, 1 teaspoon instant yeast, 125 ml milk, 40 g butter
- Knead the dough with a mixer (dough hook) or by hand – knead until the dough is smooth and elastic.
- Cover the bowl with the dough with a cloth and set aside in a warm place for about an hour to rise and double in volume.
- Lightly knead the risen dough and place it on a lightly floured surface.
- Roll out the dough into a round disc about 0.5 cm thick.
- Cut the dough into 8 triangles – I first cut it into four, and then each piece in half again.
Step 2 – shaping Biscoff croissants
- At the base of each triangle, apply a teaspoon of Biscoff cream and lightly spread it towards the tip – but do not reach the edges.8 teaspoons Biscoff spread
- Roll the triangles into crescents, starting from the base – gently stretch the dough as you go.
- Arrange the croissants on a large baking sheet lined with baking paper – keep spaces between the croissants.
- Cover the croissants with a cloth and leave them for about 30 minutes to puff up.
Step 3 – baking Biscoff cream croissants
- While the croissants are rising, preheat the oven to 180℃ (top/bottom heat mode).
- Place the croissants in the oven and bake for about 20-25 minutes – until golden brown.
- After baking, cool the croissants.
Step 4 – preparing the Biscoff glaze for the croissants.
- Heat the heavy cream, to the hot cream add the broken chocolate and Biscoff cream – mix thoroughly.100 g white chocolate, 50 ml heavy cream, 1 tablespoon Biscoff cream
- Spread or dip the croissants in the glaze.
- Finally, you can sprinkle the top of the croissants with crushed Lotus cookies.

Why bake yeast crescent rolls with cookie cream?
If you love sweets, especially yeast buns and all kinds of yeast pastries, then this recipe is for you! Super delicious, fluffy, and delicate yeast dough with the addition of sweet Biscoff cookie cream is a true delight for the palate. They will taste wonderful with morning coffee or tea, or perhaps you prefer them for dessert during the day, or maybe as a quick snack after a workout? In all these cases (and more), yeast crescent rolls will be perfect. Ingredients needed for Biscoff crescent rolls
Like all yeast cakes, for these too, you need few ingredients to bake the best cookie butter croissants. Below I provide a shortened list of products I used and possible substitutes.
- yeast – here I used instant yeast, but you can substitute it with fresh yeast, then dissolve about 15 g of yeast first in warm milk mixed with a teaspoon of sugar, cover and set aside for about 20 minutes, so that the yeast starter becomes very frothy and thick, then add it to the remaining dough ingredients and knead together
- milk – I used 1.5% milk, you can use any other milk
- all-purpose flour – type 500-550 flour will be best
- Biscoff cream (Lotus) – this is a cookie butter spread, it’s easiest to get it online (e.g., on Allegro), sometimes it’s available in Dealz, Kaufland or other larger supermarkets, you can replace it with Sante cookie butter spread (it used to be in Lidl, in the jam and chocolate spread section, but I don’t think it’s a permanent offer)
- whipping cream – for the Biscoff glaze, I used liquid 30% whipping cream

What can replace Biscoff cream in croissants?
If you can’t find the cream anywhere and don’t have time for online shopping, you can make these croissants with Nutella or another chocolate-nut spread instead of Biscoff cream. If you prefer less sweet croissants, you can also use peanut butter for the filling (and for the glaze). And besides, classically – marmalade or fruit preserves :) Don’t add these to the glaze, just make chocolate with whipping cream.

How to store yeast croissants with Biscoff cream?
Once completely cooled, transfer the croissants to an airtight container with a lid. This will help them stay fresh and fluffy longer. Croissants – taste best on the first day, but can easily be eaten even on the 3rd day. I then briefly heat the croissants in the microwave – for a maximum of 30 seconds. This makes the dough warm and fluffy again.

Can Biscoff croissants be frozen?
Yes, you can freeze Lotus cream croissants for about 3 months. It’s best to pack each one separately and store them in the freezer that way. It’s best to freeze croissants without glaze, but those with glaze will also be fine. ;)
