  • 120 ml natural yogurt (thick – at room temperature)

How to make buttery browned butter cake step by step

    Step 1 – preparations

    • Grease the baking pan with butter and sprinkle with flour or breadcrumbs.

    • Preheat the oven to 180℃ (top/bottom heat) or 170℃ (fan-assisted).
    • Transfer the butter to a saucepan and heat until it melts and brown specks appear.

    • Sift the flour with baking powder and salt.
      150 g all-purpose flour, 1.5 teaspoons baking powder, 1/4 teaspoon salt

    Step 2 – preparing the browned butter cake

    • Pour the butter into a mixer bowl, add sugar and vanilla – mix until combined.

Foam will appear during the process, and the butter will take on a more amber color with visible brown specks inside. Additionally, the butter will acquire a nutty aroma. Butter prepared this way will give baked goods a delicious taste and a slightly darker color.

    To make this cake, you only need a few basic ingredients. Below I list the products I used and possible substitutes:

    • butter – as befits French cuisine – it must be extra butter, do not substitute it with vegetable butter, but you can also use salted butter – in that case, do not add salt to the wheat flour, you can use salted butter
    • natural yogurt – I used Greek yogurt, you can use regular thick yogurt, or add 18% sour cream
    • all-purpose flour – any type will be good, use your favourite

    Tips and tricks – how to get the perfect browned butter cake

    For your French cake with a nutty aroma to turn out well, it’s important that the ingredients are at room temperature. Therefore, take the eggs and yogurt or sour cream out of the fridge a few hours beforehand. If you forget, you can place the eggs in a bowl, pour hot water from the kettle over them, and leave them for about 15 minutes. You can briefly warm the yogurt or sour cream in the microwave.
