Recipe for a cake with cardamom and pistachio streusel
Today I invite you to try a delicious and super fluffy cardamom cake with pistachios, or more precisely, with pistachio streusel. The cake itself is very aromatic, thanks to a generous amount of ground cardamom. The streusel with ground pistachios and crunchy pistachio pieces is the classic “cherry on top” and wonderfully complements the taste of this cake. Cardamom Cake with Pistachios step-by-step recipe
If you like fluffy, creamed cakes and bundt cakes, then you absolutely must try this recipe for cardamom and pistachio cake.

- 170 g butter (soft)
- 200 g powdered sugar (1⅓ cup)
- 1 teaspoon vanilla extract
- 3 eggs (size L – room temperature)
- 375 g all-purpose flour (2½ cup)
- 2 teaspoon baking powder
- 0,5 teaspoon baking soda
- 1-2 teaspoons cardamom (ground – to taste – I used 2)
- 250 ml buttermilk (at room temp.)

- approx 65 g pistachios (½ cup)
- 1 teaspoon cardamom (ground)
- 50 g all-purpose flour (⅓ cup)
- 50 g sugar (mine is cane – ¼ cup)
- 50 g butter
- approx 20 g pistachios (coarsely chopped – optional)

How to make cardamom cake step by step
Step 1 – preparations
- Preheat the oven to 170 ℃ (convection) or 180℃ (top/bottom heat mode).
- Grease the baking tin with butter and dust with flour or e.g. breadcrumbs.
- If your pistachios are in their shells, shell them and measure half a cup of shelled nuts.
- Mix together flour, cardamom, baking powder and baking soda.375 g all-purpose flour, 2 teaspoon baking powder, 0,5 teaspoon baking soda, 1-2 teaspoons cardamom
Step 2 – preparing the cardamom dough
- Cream the butter together with sugar and vanilla until fluffy and smooth – I mix for a few minutes at the highest speed of the mixer.170 g butter, 200 g powdered sugar, 1 teaspoon vanilla extract
- Add eggs one by one to the butter mixture and briefly mix each on low speed of the mixer.3 eggs
- Add wheat flour in portions to the dough, mixing briefly on low speed.
- Add flour alternately with buttermilk until you have added all of it to the dough.250 ml buttermilk
- Stop mixing when you can still see remnants of flour, then just briefly stir the dough with a spoon.
- Transfer the dough to the prepared mold.
Step 3 – preparing the pistachio crumble
- Blend the pistachios in a food processor or blender into a fairly fine powder.approx 65 g pistachios
- Add the remaining crumble ingredients to them and briefly mix them together, or knead with your fingers.1 teaspoon cardamom, 50 g all-purpose flour, 50 g sugar, 50 g butter
- Spread the crumble on top of the dough – there will be a lot of it.
- Finally, you can additionally sprinkle the top of the cake with chopped pistachios.approx 20 g pistachios
Step 4 – baking the cardamom cake
- Place the cake pan into a hot oven and bake for about an hour – check with a skewer to see if the cake is well baked inside.
- Cool the finished cake before serving.

Cardamom and Pistachio Cake – notes
I found the recipe for this cardamom cake at Broma Bakery and eagerly wanted to bake it in my own kitchen. However, I wouldn’t be myself if I didn’t change something. And so it was this time too. Sarah baked the cake in a bundt pan with a hole in the middle. For this cake, a springform pan would be necessary, so I opted for a traditional rectangular loaf pan. Additionally, I slightly changed the ingredients – mainly in the streusel – significantly reducing the amount of sugar added to it, because for me, there was definitely too much. In this form, the cake tasted absolutely divine, and I can recommend it without hesitation. You must try it!

What ingredients are necessary to prepare cardamom cake?
To bake this cake, you will need a few basic ingredients. Below is a condensed list of products I used and possible substitutes.
- sugar – for creaming butter, I usually use powdered sugar because the butter whips up very nicely and quickly; you can use regular sugar, but creaming it will take much longer than powdered sugar
- buttermilk – instead of buttermilk, you can use natural yogurt – one with a thinner consistency
- butter – butter is essential for the cake and the crumble topping – I used extra 82% butter, but you can also ultimately use a butter-blend or even vegetable butter
- cardamom – you need ground cardamom; if you have it in seeds, grind it – I grind it in a coffee grinder

Can this cake be made without cardamom?
If you can’t buy cardamom anywhere, or you don’t like this spice, you can use cinnamon instead. But you can also make a more refreshing lemon version. In that case, instead of vanilla added to the eggs, add some lemon juice or lemon extract. You can also add grated lemon zest for flavor. Make the pistachio crumble topping completely without spices then – just pistachios, butter, flour, and sugar.

What can replace pistachios in the cake?
Don’t have pistachios? Use other nuts you like – they can be hazelnuts or walnuts. Ground almonds will also work well.

How to store cardamom cake?
Cake that is not eaten on the first day should be transferred to an airtight container with a lid, or covered with a cake dome. This will prevent the cake from drying out excessively and it will retain its freshness, softness, and fluffiness longer.
You can also freeze the cardamom and pistachio cake for about 3 months.
