Moist chocolate bundt cake with blueberries – notes
For our family trip to the Masurian Lake, I needed some simple fruit cakes that would stay fresh for a long time and not dry out. So I baked two simple cakes – one redcurrant cake, which I showed earlier, and this cocoa and blueberry bundt cake. The bundt cake is super chocolatey thanks to a large amount of bitter cocoa and nicely moist thanks to the oil, milk, and blueberries added to the batter. I highly recommend this bundt cake not only for dessert with coffee but also for special occasions.

What ingredients are needed to bake a bundt cake with blueberries?
To make this cocoa bundt cake, you will need a few basic ingredients that you either already have at home or can easily buy in any store. Below is a condensed list of the products I used and possible substitutes.
- cocoa -use unsweetened cocoa powder for baking—it can be regular or fat-reduced, but you cannot replace it with sweetened cocoa mix!
- oil – I used rapeseed oil—one cup—but you can use any other mild-flavored oil, such as sunflower oil, and olive oil will also work well.
- milk – I used 1.5% UHT milk, but you can use milk with a different fat content, or even plant-based milk.

Can I add frozen blueberries to the bundt cake?
Yes, you can use frozen blueberries for the chocolate bundt cake. You don’t need to thaw them beforehand.

Can I replace blueberries with other fruits?
Yes, you can use other small fruits—raspberries or blueberries will work great here. Since the batter is very thin, I don’t recommend heavier fruits, as they will immediately sink to the bottom and the cake might end up underbaked.

How to make a pan release spread?
You can make this simple spread quickly with just three ingredients—soft margarine, oil, and flour. Simply mix them together in equal portions. You can see how I do it in the video.
How to make chocolate glaze for a blueberry bundt cake?
If you want to cover your bundt cake with chocolate glaze, heat 50 ml of heavy cream (e.g., 30%) in a saucepan and, once it’s hot, add 100 g of broken milk chocolate. Mix thoroughly until you get a smooth glaze. Let it cool and, when it starts to thicken, pour it over the top of the chocolate cake.

How to store the chocolate blueberry bundt cake?
If the bundt cake is going to be eaten fairly quickly—within 1-2 days—you can keep it on the kitchen counter; I recommend covering it with a cake dome or moving it to an airtight container so that the cake doesn’t dry out. If the cake is meant to last longer, or if it is very hot, it’s worth storing it in the fridge because the fruit inside can cause the cake to start spoiling after a few days.
Chocolate blueberry bundt cake can also be frozen for about 3 months.
I hope this chocolate blueberry bundt cake makes an appearance on your table as well. If so, I would be absolutely delighted if you shared your thoughts in the comments under the recipe.
