- 150 ml egg whites (from about 4 large eggs)
- 200 g sugar (1 cup)
- 1 teaspoon lemon juice
- 0.5 teaspoon cinnamon

- 1-2 tablespoons powdered sugar (to taste)
- 0.5 teaspoon cinnamon

How to make cinnamon meringues with plums step by step
Preparation of Cinnamon Meringues
- Preheat the oven to 150°C using the fan setting
- Pour the egg whites into a larger bowl and add lemon juice.150 ml egg whites, 1 teaspoon lemon juice
- Start mixing the egg whites until they are lightly foamy.
- Add sugar in portions and mix on high speed until the sugar dissolves well and the egg whites become thick and white.200 g sugar
- Add cinnamon to the whipped egg whites and gently mix with a spatula.0.5 teaspoon cinnamon
- Line a large baking sheet from the oven with parchment paper – spread a little meringue on the underside of the corners of the paper and stick the paper to the baking sheet.
- Place portions of meringue onto the baking sheet – I made 5 medium meringues.
- Place the meringues in the oven and immediately lower the temperature to 100 degrees.
- Bake the meringues for about 50 minutes, and cool after baking.
Preparation of caramelized plums for meringues
- Wash the plums, cut them in half, remove the pits, and cut the fruit into larger pieces.approx. 250 g śliwek
- Transfer the fruit to a pan, add butter and sugar.15 g masła, about 25 g sugar
- Heat the plums until they soften and release juice – then cool them down.
Preparation of cinnamon cream for meringues
- Pour the cold heavy cream into a tall bowl and add powdered sugar.250 ml heavy cream, 1-2 tablespoons powdered sugar
- Whip together at high speed with a mixer until you get thick whipped cream.
- Add cinnamon and mix briefly.0.5 teaspoon cinnamon
Assembling the meringue dessert with plums
- Place the meringue on a plate and top it with some cinnamon cream.
- Place the cooled plums on top of the cream.
- If you like, you can also sprinkle the plums with almond flakes :)

Meringues with Plums – a simple and impressive autumn dessert
This year’s summer hasn’t spoiled us, and even though it’s still ongoing, I already feel more like autumn is just around the corner. I’m starting to drink more warming tea and reaching for cinnamon. Its warming taste and aroma make it my favorite spice in autumn and winter. Hence, it’s no surprise that I decided to add it to my sweet meringues. In addition, lightly cinnamon whipped cream and delicious, delicately caramelized plums. This is how I created a perfect and already slightly autumnal dessert. Aromatic, lightly sweet, but with delicately tart plums. Perfect! You absolutely must try it.

What ingredients are needed to prepare cinnamon meringues with plums?
To make such an autumn dessert with plums, you will need a few basic ingredients. Below is a shortened list of products I used and possible substitutes.
- egg whites – of course, the basis of every meringue is egg whites from a chicken egg; here, for 5 meringues, I used 150 ml of egg whites – it’s best to pour them into a kitchen measuring cup – if you have a bit more, it’s not a problem – you don’t need to increase the amount of other ingredients for the meringues
- sugar – fine sugar for desserts is best – it mixes nicely faster and leaves no crystals, but if you don’t have it, use regular granulated sugar
- whipping cream – I used 30% UHT cream in a carton, you can also use 36% cream – but then the calorie content of the dessert will slightly increase!
- plums – use any plums – if you don’t have fresh plums, you can also use frozen ones – thaw and drain them first, then heat them with butter and sugar

How to store cinnamon meringues with plums?
If you don’t serve (eat) all the meringues right away, it’s best to store all parts of the dessert separately. The cinnamon meringues themselves, after baking and completely cooling, should be transferred to an airtight container. This way, they will stay fresh for a long time and won’t “absorb” moisture from the air.

After cooling, you can store caramelized plums in the refrigerator – they can stay there for several days. Transfer them to a container with a lid to keep them fresh longer and prevent them from drying out.

As for the cinnamon cream, its base is whipped cream, and unfortunately, it tends to separate (become watery) if left in a container. This is a natural phenomenon, and you don’t need to worry about it. Therefore, it’s best to prepare the cinnamon cream just before serving the meringues. However, if you don’t use all the cream at once, store it in the refrigerator and use it later. If you want a more stable cream, you can mix cold whipping cream with powdered sugar and about 100g of cold mascarpone cheese. This will significantly thicken the cream and make it less “watery”.
