How to make date cake with nuts step by step
Step 1 – preparations
- Line the baking pan with baking paper, or grease with butter and dust with flour.
- Mix together the flour, baking powder, and cinnamon.150 g flour, 2 teaspoons baking powder, 2 teaspoons cinnamon
- Heat the milk until hot and pour it over the dates – set aside for about 30 minutes.320 ml milk, 220 g dates
- Towards the end of the dates soaking, preheat the oven to 180℃ (top/bottom heat mode).
Step 2 – preparation of the date cake
- To the dates with milk, add oil and peanut butter and blend it together into a smooth mixture.approx 120 g peanut butter, 20 g oil
- Transfer the date mixture to a bowl.
- Add the mixed flour and mix with a spoon – if the batter is too thick, you can add a little more milk.
- Transfer the cake to the prepared tin.
- Sprinkle the top with chopped nuts.approx. 40 g nuts
Step 3 – baking the date cake
- Place the tin with the cake into the preheated oven and bake for about 40 minutes – until a skewer comes out clean.

Recently, I’ve been browsing the ‘internet’ in search of interesting, tasty, and healthy cakes for my husband’s running trips. That’s how I stumbled upon Nadia’s recipe Nadii. The date cake itself is incredibly simple and quick to prepare, healthy, and made only with the natural sweetness of dates. There’s no refined sugar and no eggs. Additionally, despite using peanut butter, the cake has few calories but a lot of protein. So it will be perfect for demanding workouts, runs, but also for everyday – for people who want to eat healthier and don’t shy away from sweets ;) Be sure to save this recipe for later!

As I wrote above, this cake will be great for athletes – before and after training, or competitions. But also for people who limit sugar, for people who cannot eat chicken eggs. This is a great option for people who need lactose-free recipes – use lactose-free milk here, but also for vegetarians and vegans, and even for people with celiac disease and on a gluten-free diet! Additionally, the cake will of course be great for children!

What ingredients are needed to prepare this healthy date cake?
To make such a fit date cake, you only need a few basic ingredients. Below is a condensed list of products I used and possible substitutes.
- dates – in the recipe, I give the weight of pitted dates! you can also use fresh, soft dates
- peanut butter – I used creamy (smooth) peanut butter, you can substitute it with another type of nut butter – e.g., cashew, the recipe author made this cake with tahini paste, and it can also be used here
- oil – I used rapeseed oil, but you can use any oil, including melted coconut oil
- nuts – for sprinkling the cake, I used chopped pecans – you can use any nuts, use what you have, or what you like best

How to vary the taste of pumpkin cake?
If you like, you can also add chopped chocolate or finely diced dried fruit to the cake. I think apple or pear slices arranged on top would also work well here – they will add a slight moisture to the cake.

How to prepare a healthy date cake?
To streamline and speed up the process, I immediately transferred my dates to a blender – if you want, you can chop the dates beforehand, but it’s not mandatory. Here I added hot milk, then peanut butter and oil. This allowed me to blend the mixture immediately without dirtying additional dishes. You can also blend the date mixture with an immersion blender if you don’t have a stand blender.
