  • 0.5 teaspoons cinnamon
  • 1 tablespoon erythritol (or other “sweetener”)

  • some kefir (to consistency – see notes below the recipe)

How to make a fluffy pumpkin omelet step by step

  • In a bowl, mix the flour with the remaining dry ingredients.
    60 g all-purpose flour, 1 teaspoon baking powder, 0.5 teaspoons cinnamon, 1 tablespoon erythritol

  • Add the egg and pumpkin puree to the bowl.

  • Mix thoroughly with a kitchen whisk.

  • If the batter is too thick, add kefir in portions – it should be thick but slightly pourable.

  • Set the bowl of batter aside for about 15 minutes – air bubbles should appear on the surface during this time.

  • Lightly grease a small frying pan and preheat over medium heat.
  • Pour the batter onto the pan and spread it out evenly.

  • Cover the pan with a lid and cook the omelet over low heat for a few minutes.

  • Carefully flip the omelet over, cover, and fry the other side for about 1–2 minutes.

Why make a pumpkin omelette?

With the end of summer, the arrival of autumn, and colder weather, I have a greater craving for a warm breakfast. And since I’ve always liked sweet breakfasts, such a fluffy pumpkin omelette is perfect for me. Only subtly sweet, slightly aromatic thanks to the addition of warming cinnamon, very tasty, and in a wonderful, slightly orange color. The omelette itself, made with pumpkin, is very simple and quick to prepare, so you can make it even in the morning. This way you’ll provide yourself with plenty of energy for a good start to the day!

Ingredients needed to prepare a pumpkin omelette

To make such an autumn pumpkin puree omelette, you will only need a few basic ingredients, which you probably mostly already have at home. Below is a condensed list of products I used and possible substitutes.

  • pumpkin – for this omelet (as well as for various sweet baked goods), I most recommend Hokkaido or butternut squash. I used Hokkaido pumpkin puree here, which has a strong orange flesh color, hence the puree gave my omelet such a beautiful color.
  • erythritol – to slightly reduce the calorie content of the omelet, I added erythritol as a sweetener, which has no calories, but you can also use regular sugar or xylitol. Maple syrup can also work well here – it’s liquid, so you might not need kefir for the consistency.
  • kefir – my pumpkin puree was quite moist (when it sat in the bowl, water gently collected at the edges), so I added about 25 ml of it to the omelet itself. When I made the same omelet with thick and less watery butternut squash puree, I had to add almost 120 ml of kefir. That’s why you should add it in portions, mix thoroughly, and if the batter is still too thick, add more. Instead of kefir, you can also use buttermilk or natural yogurt.

How to make pumpkin puree for an omelet?

If you don’t know how to make pumpkin puree, I recommend baking the pumpkin beforehand. I cut it in half, scoop out the seeds and stringy bits with a spoon. I place the cut pumpkin skin-side up on a baking sheet and bake it for about 40 minutes at 180 degrees Celsius. I check with a fork if the pumpkin is soft, and then I let it cool. I peel off the skin, cut it into smaller pieces, and blend it thoroughly with a blender. You can also mash it very well with a potato masher, or press it through a potato ricer. I add the puree prepared this way, after cooling, to the omelet or use it for my pumpkin cakes :) You can also watch my short video where I show how to prepare pumpkin puree. Sweet and savory pumpkin omelet

Can you prepare such a fluffy omelet in a savory version? Of course! Simply omit the cinnamon and sweetener during preparation. Instead, add a little salt. You can also season the batter with a pinch of ground ginger and curry to give it a more spicy flavor.

What to serve with pumpkin omelet? Topping ideas

Autumn fruits pair very well with such an autumn omelet – it will taste wonderful with stewed apples or pears. I ate mine with warmed and slightly mashed blueberries. Such a sauce with the addition of plain natural Greek yogurt wonderfully complemented the slightly cinnamon flavor of the pumpkin omelet. Besides fruits, this sweet pumpkin omelet will taste great with various jams, or plum preserves. Nutella, peanut butter, and Biscoff cookie spread will also work great.

If you prefer your pumpkin omelet in a savory version, then you can eat it with light cream cheese and cherry tomatoes. Or, after flipping the omelet, you can put some yellow cheese and ham on top and fry it that way. You’ll get a delicious warm breakfast :)
