Step 1 – Prep
- Grease the baking pan with butter and dust with flour, or line with parchment paper.
- Preheat the oven to 340°F (170°C) for convection, or 350°F (180°C) for conventional bake (top & bottom heat).
Step 2 – Make the Brownie Batter
- Place the butter and chopped chocolate in a medium saucepan.200 g butter, 200 g dark chocolate
- Heat gently until the butter melts and the chocolate softens, stirring until smooth.

- Gingerbread spice – I always recommend homemade gingerbread spice for the best aroma and flavor. If buying a ready-made blend, check the ingredients — avoid mixes with flour listed first. High-quality blends with minimal additives work best
- Gingerbread cookies – Thin, lightly crunchy (but not rock-hard) cookies work best. Avoid chocolate-coated cookies, as the chocolate will melt during baking. Fun shapes look especially nice on top. Homemade gingerbread cookies work great too
