- 2 eggs (size L)
- approx. 50 ml lemon juice
- 150 g sugar (¾ cup)
- 200 g all-purpose flour (1⅓ cups)
- 1 teaspoon baking powder
ingredients for the crumble for muffins
- 100 g all-purpose flour (⅔ cup)
- 60 g sugar (⅓ cup)
- 50 g butter (melted)
additionally – optional
- small fruits (e.g., blueberries, raspberries)

How to make lemon muffins with crumble step by step
Step 1 – preparations
- Preheat the oven to 180℃.
- Prepare a muffin tin, or cupcake liners – I put the batter into tall “tulip” type cupcake liners and got 15 pieces.
Step 2 – preparing the muffin batter
- Transfer the wet ingredients for the batter to a larger bowl and add sugar.250 g mascarpone cheese, 150 g Greek yogurt, 2 eggs, approx. 50 ml lemon juice, 150 g sugar
- Mix everything together with a spoon or a kitchen whisk.
- Add flour and baking powder.200 g all-purpose flour, 1 teaspoon baking powder
- Mix.
- Fill the cupcake liners with batter – to about 2/3 of their height.
- If using fruit, place it on top of the muffins.small fruits
Step 3 – preparing the crumble topping
- Pour flour and sugar into a bowl, add melted butter.100 g all-purpose flour, 60 g sugar, 50 g butter
- Mix the ingredients with a fork to obtain a crumbly mixture.
- Sprinkle the crumble topping over the muffins.
Step 4 – baking the muffins
- Place the muffin tin into the hot oven and bake for about 20-30 minutes – until a dry stick comes out.
- After baking, let the muffins cool slightly.
- You can additionally sprinkle them with powdered sugar or drizzle with icing.

I love simple and quick baked goods that I can quickly make, bake, and eat still warm with a cup of coffee. And these lemon muffins are exactly that. Thanks to the addition of mascarpone cheese in the batter, they are incredibly soft, moist, and delicious. Add juicy fruit and a sweet crumble topping, and I’m in heaven! Such muffins are not only a great idea for dessert, but you can also eat them for a sweet breakfast, pack them for work, or take them to an outdoor picnic. Be sure to try this recipe and save it for later!

What ingredients are needed to bake lemon muffins?
To make these streusel muffins you will need a few basic ingredients. Below is a shortened list of products I used and possible substitutes.
- mascarpone cheese – this is a creamy Italian cheese that you can easily buy in any Lidl, Biedronka or larger store. However, if you can’t find it anywhere, you can use full-fat (!) quark for cheesecakes, or Bieluch-type cream cheese.
- Greek yogurt – you can also use thick natural yogurt
- lemon juice – not a fan of lemon flavor? No problem, instead of lemon juice you can use, for example, orange juice, or regular milk.
- fruits – small fruits work well here – I used blueberries, but raspberries or bilberries will also be great, you can also use larger fruits, but then cut them into cubes

How to make lemon mascarpone muffins?
Making the muffins themselves is extremely simple and doesn’t even require a mixer – although of course you can use one if you wish. Here, it’s enough to mix all the ingredients with a spoon in a bowl. I first mix the wet ingredients together with sugar, which helps it dissolve a bit. Then I add wheat flour and baking powder and mix only until combined. The dough rises slightly during baking, so it’s best to fill the muffin liners to 2/3 of their height, so they have room to rise.

How to store streusel muffins?
You can store muffins baked without fruit for up to a week in a container with a lid. Covering them will keep them fresh and soft for a long time. If you bake muffins with fruit, they can last about 2 days at room temperature during summer heat. If they are not eaten by then, store the remaining muffins in the refrigerator to prevent them from spoiling.
You can also freeze lemon muffins for about 3 months.
