  • 250 g mascarpone cheese (cold)
  • 250 ml heavy cream
  • approx 50 g powdered sugar (1/3 cup – or to taste)
  • vanilla extract (to taste)
  • approx. 300 g strawberries

How to make French pastries with mascarpone and strawberries step by step

    Step 1 – preparations

    • Preheat the oven to 200°C (fan-assisted) or 210°C (top-bottom heat).
    • Take the puff pastry out of the fridge about 20-30 minutes beforehand.

    Step 2 – preparing the pastries

    • Unroll it, transfer it to a large baking tray lined with baking paper, and remove the paper it was wrapped in.
    • With a sharp knife, cut the dough into roughly two equal strips along the longer side.
    • Cut the strips in half – to get a total of 8 pieces of dough.

    • You can now fold the pieces of dough in half to form triangles – in that case, it’s good to press them lightly so that the dough sticks together slightly. You can also bake the pastries as squares/rectangles.

    • Bake the pastries for about 20-25 minutes – until they are golden brown and have risen significantly.
    • After baking, cool the pastries.

    Step 3 – Assembling the cookies

    • Cut the cooled cookies in half using a sharp knife (preferably a serrated one).

    • Place the mascarpone, heavy cream, sugar, and vanilla into a tall bowl.

    • Whip them together into a thick cream.

    • If you have piping tips, transfer the frosting into a piping bag fitted with a tip.

    • Pipe or spread the cream onto the cookies.

    • Wash the strawberries and cut them into smaller pieces.

    • Top with the fruit

    • Top with the other half of the cookie and finish by dusting with powdered sugar.

    I recently craved something sweet with strawberries, so I baked my family these very simple and super quick cookies made from ready-made puff pastry. Thanks to the addition of a lightly sweetened mascarpone cream and juicy strawberries cut into pieces, I got delicious and incredibly photogenic cookies. Save this recipe and definitely try it!

    What ingredients are necessary to prepare strawberry cookies?

    To prepare this quick strawberry dessert, you only need a few basic products that you can easily buy in any store. Below I provide a shortened list of products I used and possible substitutes.

    • puff pastry – I used ready-made puff pastry – if you have frozen pastry, you need to take it out of the freezer well in advance so that it thaws properly
    • mascarpone cheese – this is a creamy Italian cheese that you can easily buy in every Lidl, Biedronka, and larger stores. However, if you can’t buy it anywhere, prepare the cream with a double amount of whipping cream.
    • whipping cream – I used 36% whipping cream here – it was UHT cream in a carton, you can also use 30% cream.
    • strawberries – fresh fruit will, of course, be the best, but in other seasons when fresh strawberries are not available or are very expensive, you can prepare fruit jelly from frozen strawberries, or even use strawberry jam/preserve.

    Can other fruits be used for the pastries instead of strawberries?

    Of course! Depending on the season, you can use currently available fruits – such puff pastries will also taste excellent with blueberries, bilberries, or raspberries. You can also use larger fruits and cut them into smaller pieces before adding them. Try making these pastries with peaches, apricots, or mango – in every version, pastries with mascarpone and fruit will taste delicious!

    How to store mascarpone and strawberry pastries?

    Puff pastries are best consumed immediately after preparation, although they can also sit for a few hours with the cream and fruit on them. Such freshly prepared puff pastries will be nicely crispy and won’t soften from the cream. If you don’t eat all the pastries at once, I suggest storing the baked puff pastry separately (transfer it to an airtight container and store it at room temperature). Store the cream and sliced fruit in the refrigerator to maintain freshness and a refreshing taste.
