Recipe for a festive meringue dessert with cranberries

  • 250 g cranberries (fresh or frozen)
  • 100 g raspberries (fresh or frozen)
  • 100 g sugar (half a cup)
  • approx. 170 ml orange juice (for me, squeezed from two large oranges)
  • zest from two oranges
  • 1 teaspoon potato starch (plus a little water)

  • 2 package vanilla pudding (or cream-flavored – each for half a liter of milk)
  • 60 g sugar (if you have unsweetened pudding – 4 tablespoons)
  • 500 ml milk
  • 250 g mascarpone cheese

additional ingredients for the dessert

  • approx. 250-300 g meringues
  • 250 ml heavy cream (well chilled)
  • 2 tablespoons powdered sugar
  • fresh raspberries (for decoration, or other decoration)

How to make a meringue trifle dessert step by step

    Step 1 – prepare the cranberry fruit filling

    • Transfer the cranberries to a pot and add the raspberries – you don’t need to defrost them.

    • Add the squeezed orange juice and grated zest.

    • Add sugar and bring everything to a boil until the cranberries burst and soften – and the mixture thickens slightly.

    • Mix potato starch with a small amount of water and stir.

    • Pour the mixture into the hot cranberries and stir, cooking over low heat until the mixture thickens.

    • Set aside the fruit filling to cool.

    Step 2 – prepare the pudding cream

    • From half a liter of milk, pour off about half a glass.
      500 ml milk
    • In a smaller amount of milk, mix both puddings and sugar (if you need to sweeten it).

    • Boil the rest of the milk.
    • Pour the mixed pudding into the hot milk and cook over low heat, stirring constantly, until you get a thick pudding.

    • Immediately cover the pudding with cling film so that it touches the surface and set aside to cool.

    • Blend the cooled pudding with mascarpone cheese, adding it spoon by spoon – if your pudding is at room temperature, the cheese should also be at room temperature.

    Step 3 – dessert preparation

    • Spread about 2/3 of the cooled cranberry fruit jelly onto the bottom of a glass bowl.

    • Crumble about 150g of meringues over it.

    • Layer the entire pudding cream over the meringues.

    • Spread the rest of the fruit jelly over the pudding in an even layer.

    • Sprinkle the top with the remaining meringues.

    Step 4 – preparing whipped cream

    • Whip the cold heavy cream together with powdered sugar at high speed for several minutes until you get thick whipped cream.

    • Spread it over the meringues in an even layer.

    Step 5 – decorating the dessert

    • You can sprinkle the top of the whipped cream with fresh raspberries or cranberries.

    Pavlova with cranberries and cream – notes

    My suggestion today is a perfect choice for Christmas. Here I’ve combined festive cranberries with sweet meringue and a delicious, not-too-sweet custard cream with mascarpone. The dessert, served in a transparent glass bowl, looks fantastic thanks to its colorful layers. I am convinced that such a dessert will appeal to both adults and children :)

    What ingredients are essential for a Christmas trifle?

    To prepare this dessert, you will need a few basic ingredients. Below is a condensed list of products I used and possible substitutes.

    • cranberries – I used fresh cranberries, but you can also use frozen ones – you don’t need to thaw them beforehand
    • orange juice – I squeezed juice from fresh oranges, but if you don’t have the fruit, use about 3/4 cup of regular orange juice and do not add orange zest
    • mascarpone – this is an Italian creamy cheese that you can find in every Lidl, Biedronka, and larger stores
    • pudding – I had sugar-free vanilla pudding, so I added 60g of sugar to prepare it – according to the manufacturer’s recommendations
    • whipping cream – I used 30% fat cream in a carton, you can also use 36% cream

    How to make meringues for a meringue dessert?

    You can buy meringues for the dessert – e.g., at a bakery, or bake them yourself. I added meringues I made myself. I prepared 6 larger meringues and from the rest, I made additional mini meringues and meringue Christmas trees, which I used to decorate the dessert. To make meringues at home, you will need 6 egg whites from large eggs, 300g of sugar, a teaspoon of potato starch, and a teaspoon of lemon juice or vinegar. If you don’t know how to make such meringues, it’s best to check out my meringue recipe – you’ll also find a short preparation video there.

    How to make meringue Christmas trees for dessert?

    Unfortunately, I didn’t record a video showing how to make these Christmas trees, but it’s not difficult. Once you have the meringue mixture ready, transfer some of it to a strong piping bag. You can also attach a piping tip – I used Wilton tip #103 (but if you don’t have tips, just make a hole in the corner). Place baking paper on a large baking sheet and gently spread a little meringue on the corners to stick the paper to the sheet. Squeeze out about 2-3 narrow strips of cream and insert a wooden stick or paper straw into it (this will be used to insert the Christmas tree into the dessert). Now, starting from the top, pipe the meringue (moving from side to side) so that it widens downwards, forming the shape of a Christmas tree – mine were about 7 cm high. Finally, you can sprinkle the Christmas trees with sugar sprinkles – thicker sprinkles work best, as fine ones might dissolve in the oven. Dry these meringue Christmas trees at 90-100 degrees Celsius (fan-assisted) for about 1-1.5 hours. Pavlova with cranberries looks incredibly festive with such a decoration, so it’s worth spending a little time preparing these little Christmas trees :)

    Meringue trifle dessert – storage

    Immediately after making, it’s worth putting the dessert in the fridge so the meringues soften slightly, but you can also serve it right away. The dessert is best on the first day, although mine stayed in the fridge for three days (some leftovers). On the third day, the dessert became slightly watery, but it was still very tasty.
