- 1 tablespoon orange juice
- 250 g ricotta cheese
- 2 eggs (size L)

How to make mini ricotta donuts step-by-step
Step 1 – preparation
- Zest one orange and squeeze the juice from one half.
- Pour the oil into a pot and heat it to about 180°C.oil
Step 2 – preparing the dough for mini doughnuts
- Mix together ricotta, eggs, orange zest, and juice.orange zest, 1 tablespoon orange juice, 250 g ricotta cheese, 2 eggs
- Add flour, baking powder, and sugar.130 g all-purpose flour, 2 tablespoons sugar, 2 łyżeczki baking powder
- Mix into a rather thick batter.
Step 3 – frying mini doughnuts
- Spoon heaped portions of the batter into the hot oil (use a second spoon to help release the batter).
- Fry for about 1-2 minutes and then turn the doughnuts to the other side.
- Fry on the other side for about a minute – you can check with a toothpick if the dough is cooked through in the middle.
- Remove the doughnuts onto a paper towel to drain excess fat.
- Coat or sprinkle the doughnuts with sugar.

Holidays are ongoing, plus we have carnival, and Fat Thursday will be soon. That’s why today I have for you a recipe for very quick and simple Italian ricotta cheese doughnuts. I highly recommend this recipe, because the doughnuts are express to prepare – they are made with baking powder, not yeast. So preparing the doughnut dough will take you literally 5 minutes! What’s more, the doughnuts are soft, moist, and nicely orange-flavored. They will surely appeal to both children and adults. My advice? Make a double batch right away!

Ingredients needed for Italian ricotta doughnuts
To make such homemade mini orange doughnuts at home, you will only need a few basic ingredients. Below is a shortened list of products I used and possible substitutes.
- ricotta – is a light Italian cheese that you can easily find in any large store, as well as in discount stores like Lidl or Biedronka; alternatively, you can replace it with a lighter cheesecake quark/curd cheese – e.g., President quark, or Pilos cheesecake quark/curd cheese, or one from Biedronka.
- orange – if you don’t have an orange for juice and zest, you can add regular orange juice, or orange essence/oil.
- all-purpose flour – use any flour – your favourite.
- oil – for frying you will need fat; I used rapeseed oil, but you can also melt lard – it’s best to use about 0.5-1 liter of fat, depending on the size of the pot used.

Tips for ricotta doughnuts to always turn out well
For the doughnuts not to absorb too much oil during frying, it is important that the fat is well heated. If you don’t have a special thermometer to measure the temperature, then before adding portions of dough for frying, first add a small amount of dough and see how it fries. If nothing much happens, wait a little longer. If the dough starts frying immediately, you can add the doughnuts.
Also, after frying, be sure to place them on a paper towel, which will absorb some of the oil and make the doughnuts less greasy.

How to serve Italian mini ricotta doughnuts?
I recommend immediately coating the drained orange mini doughnuts in sugar – it can be regular sugar or powdered sugar. The dough itself had very little sugar (so the doughnuts wouldn’t burn during frying), so they are not too sweet on their own.
You can also drizzle the mini ricotta doughnuts with orange glaze to further emphasize their orange flavor.
How to make orange glaze for ricotta doughnuts?
To make orange glaze for doughnuts, prepare about 100 g of powdered sugar (2/3 cup) in a bowl and add orange juice to it in portions – one tablespoon at a time. Usually two tablespoons of juice are enough to get a slightly runny glaze. Then drizzle it over the mini doughnuts and they’re ready!
