How to Make Oatmeal Cookies with Cranberries – Step by Step
Step 1 – Preparation
- Line two large baking sheets with parchment paper.
- Chop the white chocolate into small pieces.about 100 g white chocolate (about ⅔ cup chocolate chunks or chips)
- Preheat the oven to 350°F (180°C).
Step 2 – Making the Cookie Dough
- Place the butter, sugar, and egg in a large mixing bowl. Beat on high speed for a few minutes until light and fluffy (I mixed for about 3 minutes).125 g butter, 150 g sugar, 1 egg
- Scrape down the sides of the bowl to ensure everything is evenly mixed.
- Gradually add the flour mixed with baking powder and mix briefly on low speed — just until combined.150 g all-purpose flour, 1,5 teaspoons baking powder
- Add the rolled oats and gently stir with a spoon.100 g old-fashioned rolled oats
- Fold in the dried cranberries and white chocolate, mixing until evenly distributed.about 150 g dried cranberries, about 100 g white chocolate (about ⅔ cup chocolate chunks or chips)
Step 3 – Baking the Oatmeal Cranberry Cookies
- Scoop portions of dough using a large spoon or ice cream scoop. You can lightly roll the dough into balls for more evenly shaped cookies.
- Place the dough on the prepared baking sheets, leaving space between each cookie — they will spread slightly while baking.
- Bake in the preheated oven for about 15 minutes. If baking two trays at once, rotate them halfway through for even baking.
- Right after baking, the cookies will be very soft and delicate. Let them cool slightly on the baking sheet before transferring them to a wire rack.

Ingredients for Oatmeal Cookies
To make these oatmeal cookies, you’ll need just a few basic ingredients that are easy to find in any grocery store. Below is a short list of what I used, along with possible substitutions:
- Rolled oats – For the best nutritional value, I recommend old-fashioned rolled oats, but you can also experiment with other types, such as rye flakes
- Butter – I used full-fat butter (about 82%), but you can also use a butter blend or plant-based butter — just make sure it’s at room temperature
- Sugar – I used brown sugar, which pairs beautifully with oatmeal cookies, but white sugar or powdered sugar will work as well
- White chocolate – I added 3.5 oz (100 g) of chopped white chocolate. If you like sweeter cookies, feel free to add more. For a less sweet version, swap white chocolate for dark chocolate
- Dried cranberries – I used 5 oz (150 g), but you can easily adjust the amount depending on how much you enjoy their flavor

How to Make Other Variations of Oatmeal Cookies
These oatmeal cookies are incredibly easy to customize. As mentioned above, you can replace white chocolate with dark or milk chocolate. Cranberries can be swapped for raisins or other dried fruits, such as dried apricots or prunes — just chop them into smaller pieces first.
You can also add chopped nuts. Keep in mind that changing or increasing the add-ins will affect the overall calorie count.

How to Store Oatmeal Cookies with Cranberries
Once baked and fully cooled — when the cookies have firmed up — transfer them to an airtight container with a lid. This will keep them fresh and perfectly textured: lightly crisp on the outside and softer on the inside.

How Many Calories Are in Oatmeal Cookies with Cranberries?
In the nutrition table below the recipe, I’ve listed the calorie count for 16 oatmeal cookies made with white chocolate, based on the ingredients I used. Adding more or less cranberries and chocolate will affect the final calorie count. Cookie size matters too — if yours are smaller or larger than mine, the calories will vary. For reference, 100 g of these cookies contains about 491 calories (carbs: 72 g, fat: 21 g, protein: 5 g).
I hope you and your loved ones enjoy these oatmeal cookies with cranberries and white chocolate as much as we do, and that you’ll return to this recipe often. Be sure to share your thoughts in the comments below and try my other oat-based recipes as well.
