Just a few ingredients, a bowl – quick and without unnecessary rolling or cutting out cookies with molds. If you’re craving something sweet but don’t want to spend hours in the kitchen, you must try this recipe. I already know I’ll be coming back to it!

- 70 g butter (soft)
- 100 g pistachio spread
- 100 g sugar (½ cup)
- 1 egg (size L)
- 150 g all-purpose flour (1 cup)
- 110 g rolled oats (1 cup)
- 1 teaspoon baking powder

How to make oat-pistachio cookies step by step
Step 1 – preparations
- If you have pistachios in shells, you must shell them beforehand (I’m giving the weight of pistachios without shells!).aprox. 100 g pistachios
- Turn on the oven to top and bottom heating at 180℃ or convection at 170℃.
- Mix together the flour, rolled oats, and baking powder.150 g all-purpose flour, 110 g rolled oats, 1 teaspoon baking powder
- Line a large baking sheet from the oven with parchment paper.
Step 2 – preparing oat cookies with pistachios
- Mix together butter, pistachio cream, and sugar – just mix until combined.70 g butter, 100 g pistachio spread, 100 g sugar
- Add the egg and mix briefly.1 egg
- Pour in the flour with oat flakes and mix on low speed with a mixer, or stir with a spoon.
- Add the chopped pistachios to the bowl.aprox. 100 g pistachios
- Mix the dough with a spoon.
Step 3 – shaping pistachio cookies
- Scoop portions of dough with a large spoon.
- Roll it into balls in your hands – mine came out roughly the size of a ping-pong ball.
- Arrange the cookies on a baking sheet, leaving space between them.
- Lightly flatten each cookie with the heel of your hand.
Step 4 – baking oat-pistachio cookies
- Place the baking sheet with cookies into the preheated oven – on the middle rack – and bake them for about 15 minutes – until nicely browned.
- After baking, cool the cookies for about 10 minutes and then you can essentially eat them :)

Oatmeal cookies with pistachios – notes
Together with my daughter Weronika, we love slightly crispy oatmeal cookies, especially such homemade oatmeal cookies. That’s why there are already several great recipes for oatmeal cookies on the blog. And now I’m adding to this collection cookies with pistachio cream and pistachios. Despite the pistachio cream, the cookies are not too sweet – for me, they were simply perfect. In addition, the slightly crunchy pistachio nuts make every bite of the cookies taste exquisite! You must try this recipe and save it for later!

What ingredients are essential for preparing pistachio cookies?
To bake these pistachio cookies you will need a few basic ingredients, which you can get in discount stores such as Lidl, Biedronka, Netto, as well as in larger supermarkets. Below I provide a shortened list of products I used and possible substitutes.
- butter – for me, as usual, it’s extra butter with 82% fat content; you can substitute it with a butter blend, or even completely replace it with vegetable butter
- pistachio cream – I used Maribel brand pistachio cream from Lidl – it’s always available there (in my store, it’s on the jam shelves); you can also use another cream – e.g., from Biedronka, although they don’t seem to have it in regular sale there, and it usually appears with Italian cuisine products
- pistachios – I added 100g of pistachios to the cookies – this is the weight of the nuts themselves – without shells! I added about 70g of salted pistachios and 30g of unsalted ones. Such salted nuts gave the cookies a nice flavor. So if you have salted nuts, be sure to use them! At Lidl, you can buy shelled pistachios – in both salted and unsalted versions.
- oat flakes – I used mountain oat flakes; you can also use regular ones, instant ones will also be fine, but they are worse than regular and mountain oats in terms of nutritional value

How to diversify the flavor of oat cookies with pistachios?
If you like, you can also add other ingredients to these cookies. For example, chopped chocolate works well. Depending on how sweet you like your cookies, you can use dark, milk, or white chocolate. Here you can add about 50-100g of chocolate chopped into smaller pieces. Chocolate chips or drops can also be used.
Besides chocolate, you can also add other nuts – e.g., walnuts or hazelnuts. Dried fruits like raisins, apricots, peaches, or bananas also work well. It’s worth cutting larger fruits into smaller pieces beforehand.

How to store oat-pistachio cookies?
After baking, let the cookies cool completely, then transfer them to an airtight container with a lid. The cookies are best eaten within the next 3-5 days, although they can also last longer. The longer they sit, the harder and more crumbly they will become. Initially, they are crispy on the outside and slightly soft on the inside.
