How to make cappuccino cookies step by step
Step 1 – preparations
- Turn on the oven – 170℃ (fan-assisted) or 180℃ (top/bottom heat).
- Melt the butter in a saucepan and heat until brown specks appear.170 g butter

- Using a large spoon (or an ice cream scoop), scoop portions of the dough and place them spaced apart on a large oven baking tray.
Step 3 – baking cookies
- Place the baking tray in the preheated oven and bake for about 11–12 minutes, until lightly golden.
- Right after baking, the cookies will still be very soft, so let them cool slightly before removing them from the tray.

As mentioned above, these aromatic coffee cookies require only a few basic ingredients. Below is a shortened list of the products I used, along with possible substitutions.
- Butter – I used extra butter with 82% fat; you can optionally replace it with plant-based butter or oil (in that case, don’t heat it
- Instant coffee – I used granulated instant coffee, which didn’t fully dissolve when blended with the butter, but instead created cute little speckles in the cookies. It actually looked really nice, so if you have this type of coffee, go ahead and use it and don’t worry if it doesn’t dissolve completely. You can, of course, also use instant coffee powder. Do you have flavored instant coffee? That works too!
- All-purpose flour – any all-purpose flour will work well
- White chocolate – the cookies are fairly sweet, but if you like them sweeter, you can add even more than 100 g of chocolate.

How to change the flavor of your cappuccino cookies
If you don’t have white chocolate, you can swap it for milk chocolate. If you prefer less sweet treats, add some chopped dark or semi-sweet chocolate instead. You can also use chocolate chips in place of the chocolate chunks.

Why do we melt and brown the butter for coffee cookies?
The butter we’re using here is called “brown butter”. It has a light brown color with tiny dark brown specks. Browning the butter gives it a slightly nutty flavor and aroma, which really boosts the flavor of your coffee cookies.
If you’re short on time (though it doesn’t take long!), you can just melt the butter. Or, as I mentioned earlier, you can use oil instead – nut or sesame oil works great and adds its own tasty twist to the cookies.

Shaping and Baking the Cookies
Scoop generous portions of dough – I got 12 large cookies out of this batch. If you’re using a regular spoon, make it slightly heaping. You can also gently roll the dough in your hands to form a ball – this helps the cookies hold a nicer shape. If you have an ice cream scoop, even better – no rolling needed!
I baked my large coffee and chocolate cookies for exactly 12 minutes in a convection oven. Since your cookies might be a slightly different size, start checking them around 10 minutes. Once they’re nicely golden, you can take them out to cool. Keep in mind, they’ll be soft in the center at first, but as they cool, they firm up a bit and get crispy on the outside.
