- 450 g wheat flour – all-purpose (3 cups)

- 0.5 teaspoon baking soda
- 120 ml oil ((half a cup))
- 420 ml sparkling water ((1 and 3/4 cups))

How to make crispy street-style waffles
- Beat the egg whites with a pinch of salt until stiff peaks form.4 egg whites
- In a second larger bowl, mix the egg yolks together with sugar and vanilla sugar (if using) until fluffy (like kogel mogel).4 egg yolks, 100 g sugar, 1 tablespoon vanilla sugar
- Add oil to the egg yolks and mix.120 ml oil
- Mix the flour thoroughly with baking powder and baking soda.450 g wheat flour – all-purpose, 0.5 teaspoon baking powder, 0.5 teaspoon baking soda
- Add flour to the egg yolks alternately with water.420 ml sparkling water
- Finally, add the beaten egg whites and gently mix with a spoon.
- Cook the waffles in a well-heated waffle maker.
- Place the cooked waffles on a wire rack – do not stack hot waffles on top of each other, as they will soften.
- Serve with your favorite toppings.

I thought I already had the perfect waffle batter recipe. Recently, I kept making them from one recipe – and they always turned out divine, delicate, and crispy (but precisely that delicate). Lately, my waffle maker started malfunctioning, and we had to buy a new one. We decided on an MPM waffle maker because it had many positive reviews. A waffle recipe was included with this waffle maker – waffles on sparkling water. I made them and I must say, these will be my favorite waffles from now on! They come out thick, fluffy, and at the same time crispy and hold their shape. They don’t bend under the weight of toppings. Exactly like by the sea! I don’t know how much of this is due to a good waffle maker – it’s probably not insignificant – but the waffles turn out perfect. You must try them!!

Ingredients for the best waffles and substitutes
To prepare these crispy waffles, you will need a few basic ingredients:
- eggs – I recommend size L eggs – for this recipe you need 4 large eggs – you must first separate the whites from the yolks and place them in separate bowls
- wheat flour – it’s best to use type 450, 500 or 550 flour here
- baking soda and baking powder – add a little of both ingredients to the batter; however, if you don’t have baking soda, add a total of 2 teaspoons of baking powder to the batter
- oil – oil added to the waffle batter is to prevent them from sticking to the waffle maker – you can use sunflower oil, rapeseed oil, or even melted and cooled coconut oil.
- water – for this waffle recipe, we use sparkling mineral water – it can be medium or highly carbonated.

How to make crispy waffles – tips
Their fluffiness and crispiness depend on two factors.
- Well-beaten egg whites
- Sparkling water
First, beat the egg whites until stiff – until they are very thick, white, and fluffy. You can do the grandma’s test – carefully turn the bowl with the beaten egg whites upside down – if the whites don’t fall out, they are well beaten. Then mix the yolks with sugar – mix them until they thicken and become pale. Then add oil to them, followed by flour mixed with baking powder and soda, alternating with sparkling water. Sparkling water is key – it will add lightness to the waffle batter. Finally, add the previously beaten egg whites to the batter. Mix the batter gently after adding the egg whites! Spoon portions of the batter onto a very hot waffle maker (you don’t need to grease it with oil) and bake the waffles until they are nicely browned. Then remove them and place them on a rack. And put the next portions of batter into the waffle maker.
Also remember that hot waffles cannot be stacked one on top of another. If you do, they are guaranteed to soften and become mediocre. They should be placed on a rack, each separately!
Sprinkle the finished waffles with powdered sugar and serve with your favorite toppings. I recommend serving them with whipped cream; fresh seasonal fruits will also be an excellent addition to waffles. To make perfect whipped cream for waffles, simply whip heavily chilled heavy cream with a little powdered sugar and spread it on the waffles. It’s best to put such whipped cream on cooled waffles, as it will quickly start to melt.

How to store waffles?
I like to transfer the waffles to a rack and place them in an oven preheated to about 100 degrees Celsius. After baking each batch, I transfer it to the heated oven. Then they are all warm and crispy, and our whole family can enjoy their taste together. I transfer any waffles we don’t eat to an airtight container to prevent them from drying out.
How to reheat waffles?
To make the waffles nicely warm again, I simply put them in a toaster and heat them like toast. If you don’t have a toaster, preheat the oven to 180 degrees Celsius and bake the waffles for about 5 minutes.
