- 375 g all-purpose flour (2½ cups)
- 1 tablespoon sugar
- 2 teaspoons baking powder
- 1 pinch salt
- 170 g butter (cold!)
- 180 ml buttermilk (cold!)
- 1 egg (L – cold)
- approx 250 g blueberries
- 100 g white chocolate (chopped)
- milk (a dash)

- 100 g powdered sugar (⅔ cup)
- 1 tablespoon lemon juice (optional)
- 2-3 tablespoons milk

How to make blueberry scones step by step
Step 1 – preparations
- Preheat the oven to 180℃ in top/bottom heating mode or 170℃ with convection.
- Line a large baking sheet from the oven with parchment paper.
- In a large bowl, mix together the dry ingredients for the scones.375 g all-purpose flour, 1 tablespoon sugar, 2 teaspoons baking powder, 1 pinch salt
Step 2 – preparing the scone dough
- Grate cold butter into the bowl with the mixed dry ingredients using a coarse grater.170 g butter
- Mix them together so that the butter is coated.
- Pour in the buttermilk and mix together with a spoon.180 ml buttermilk
- Crack the egg into a small bowl and whisk with a fork – pour into the bowl with the dough and mix – or knead briefly together.1 egg
- Add blueberries and chocolate to the bowl – mix together.approx 250 g blueberries, 100 g white chocolate
Step 3 – shaping the scones
- Dust the work surface with a little flour and place the dough on it.
- Knead briefly, then flatten with your hands into a rectangle about 1 cm thick.
- Cut the dough lengthwise into three strips, then cut the strips into pieces to get 12 portions.
- Transfer the scones to a baking sheet – keeping them spaced apart.
- Brush each scone with a little milk on top.milk
Step 4 – baking the scones
- Place the tray with the scones into the hot oven and bake for about 20 minutes – until they rise and are nicely baked on top.
- Remove the baked scones from the oven and let them cool slightly.
Step 5 – decorating with icing
- Add lemon juice and milk to the powdered sugar – add the milk in portions and mix until you get a slightly liquid icing.100 g powdered sugar, 1 tablespoon lemon juice, 2-3 tablespoons milk
- Glaze the scones with icing.

Scones are very popular in the United States and the United Kingdom, baked mainly for breakfast, but they also make an excellent sweet dessert or a snack throughout the day. Their main advantage is how quick they are to prepare—unlike yeast buns. Plus, the very basic ingredients and mix-ins mean that these scones often appear on my table, both in sweet and savory versions. If you haven’t made scones at home yet, you absolutely must try this recipe. This particular one is inspired by the blackberry and lavender scones from Tieghan at the Half Baked Harvest blog.

What ingredients are needed to bake blueberry scones?
To bake these blueberry scones, you’ll need a few basic ingredients—remember that the butter, buttermilk, and egg must be cold, so make sure to refrigerate them several hours in advance! Here is what you’ll need:
- blueberries -I used fresh fruit, but you can also use frozen blueberries—there’s no need to thaw them beforehand, and in fact, it’s actually better not to!
- butter – instead of butter, you can also use a butter blend or even plant-based butter.
- buttermilk– instead of buttermilk, you can also use kefir or, as a last resort, a thin natural yogurt
- all-purpose flour – you can use your favourite
- white chocolate – I used white chocolate melts, which I roughly chopped, but of course, you can use a regular white chocolate bar or chocolate chips. There’s only a tablespoon of sugar in the dough, so the chocolate (and the icing on top) provides all the sweetness for these scones.

How to make scones successfully?
Cold ingredients are half the battle here. It’s best to grate the butter using a coarse grater or chop it into very small pieces. Don’t overwork the dough—it should be lumpy with visible bits of butter. This ensures the scones rise beautifully, becoming soft on the inside and nicely crisp on the outside.

Can you make scones with other fruits?
Yes, you can use other fruits, but choose firmer ones so they don’t fall apart while kneading the dough. You can use firm strawberries, or peaches, apples, and firm pears cut into smaller pieces.

How to store blueberry scones?
Once the scones have cooled down completely, it’s best to transfer them to an airtight container with a lid to prevent them from drying out and to keep them fresh longer. You don’t need to refrigerate them. They will stay fresh at room temperature for about 3 days.
