Recipe for meringue cake with Oreo cream

I invite you to try this winter snowman cake. This is a layered cake where I filled two meringue layers with mascarpone cream mixed with powdered milk and combined with chopped cookies. On top, I spread whipped cream. This created a cake whose colors remind me of a snowman. This cake will be perfect in winter, but not only then! You must try it!

  • 2 x 2 egg whites (from size L eggs)
  • 2 x 100 g sugar (2 x ½ cup)
  • 2 x 0.5 teaspoons potato starch
  • 2 x 0.5 teaspoons lemon juice

  • 250 g mascarpone cheese (cold)
  • 250 ml heavy cream (well chilled)
  • 2 tablespoons powdered sugar (- optional)
  • 50 g milk powder (full-fat (approx. ½ cup))
  • approx. 100 g dark cookies (e.g. Oreo)

How to make a snowman cake

    Step 1 – preliminary preparations

    • Preheat the oven to 100 degrees (fan-assisted).
    • Line the bottom of the baking pan with parchment paper – leave the sides empty.

    Step 2 – preparing the meringues

    • Prepare two meringue layers separately – if you have two identical pans, you can bake them at the same time.
    • Briefly whisk the egg whites until they are slightly fluffy.

    • Add sugar to them in portions, mixing on high speed with a mixer – mix until you get smooth, white egg whites and all the sugar has dissolved (you won’t feel sugar crystals).

    • Add potato flour and lemon juice to the egg whites – mix briefly.
      2 x 0.5 teaspoons potato starch, 2 x 0.5 teaspoons lemon juice

    • Spread the meringue into the pan and level it.

    • Place in the hot oven and bake for about an hour.
    • After baking, trim the meringue, remove it from the pan, and prepare the second meringue layer as before.
    • Cool the meringues completely.

    Step 3 – prepare the Oreo cream

    • Transfer the cream cheese to a bowl and briefly mix with powdered sugar.

    • Add the heavy cream in portions and mix on high speed until you get a thick cream.

    • Add powdered milk and briefly mix.

    • Coarsely chop the cookies.

    • Add the cookies to the cream and mix with a spoon.

    Step 4 – assembling the cake

    • Spread the cream with cookies onto the meringue base placed in the mold and level it.

    • Place the second meringue layer, using the baking paper it was baked on to help (don’t worry if the meringue cracks slightly).

    Step 5 – Preparing the whipped cream.

    • Whip the heavy cream together with the sugar until it forms thick whipped cream.

    • Spread the whipped cream on top of the cake.

    • Put the cake in the refrigerator for about 2–4 hours.

    Meringue cake with Oreo cream – notes

    Despite winter, it’s not very wintry outside – at least where I am. That’s why I came up with this winter cake. White with pieces of black cookies, which allude to pieces of coal stuck into snowmen. Thanks to the meringue layers and cream, the cake is light and delicious. Although I must warn you, it’s very sweet – at least by my standards. Therefore, if you prefer less sweet cakes, you can omit the sugar added to the Oreo cream and even to the whipped cream. The sweetness of the meringue layers will be entirely sufficient :)

    What ingredients are essential to make snowman cake?

    The list of ingredients I used may seem quite long at first glance, but the ingredients repeat, so ultimately there aren’t that many purchases. Below I list the products I used and possible substitutes.

    • powdered milk – for the cream, you will need 50 g of full-fat powdered milk – make sure it’s not granulated milk! You can easily find such milk, for example, at Biedronka or in larger stores.
    • mascarpone – this is a rich, creamy Italian cream cheese; you can buy it at any Biedronka, Lidl, or large supermarkets.
    • dark cookies – I’m referring to Oreo cream here, although technically I didn’t make it with those specific cookies. I used a cheaper substitute from Biedronka – Baitz cookies. You can also find their equivalent at Lidl (Neo cookies), but of course, you can use original cookies :)
    • whipping cream – for both the whipped cream and the cookie cream, I used 30% cream in a carton. You can optionally replace it with 36% cream – in that case, the cake’s calorie content will increase slightly!

    How to store the snowman cake?

    Due to the cream and whipped cream, the cake is best stored in the refrigerator. The cake is best eaten on the first day after preparation; afterwards, it might become a bit watery, but it’s still good and tasty to eat. For me, the last piece was still in the fridge on the fourth day.

    If you want to make your work easier, you can prepare the meringue layers in advance, wrap them in foil or store them in an airtight container to prevent them from absorbing moisture, and use them when you want to serve the cake.

    How many calories does meringue with Oreo cream have?

    In the table below the recipe, I provided the calorie content for 100 g of cake, but if you divide the cake into approximately 20 equal portions, each piece will have only 214 kcal (carbohydrates – 19 g, fats – 14 g, proteins – 2 g). Such a low calorie count is due to using only egg whites and a relatively small amount of sugar :) So you can eat it without guilt :)
