- 300 g sweet potato
- 120 ml oil
- 2 eggs (size L – at room temperature)
- 230 g wheat flour – all-purpose (1 and slightly over half a cup)
- 200 g sugar (1 cup)
- 2.5 teaspoons baking powder
- 2 teaspoons gingerbread spice

- 60 g sugar (scant 1/3 cup)
- 90 g wheat flour – all-purpose (2/3 cup)
- 1 teaspoon cinnamon

How to make sweet potato cupcakes step by step
Step 1 – preparations
- Wash the sweet potato, cut it in half, and place it cut-side down on a baking sheet lined with parchment paper.300 g sweet potato
- Bake until soft in an oven preheated to 200 degrees Celsius for about 40-50 minutes – depending on the size of your sweet potato.
- After baking, let it cool slightly.
- Preheat the oven to 180 degrees Celsius in top/bottom heat mode or 170 degrees Celsius (fan-assisted).
Step 2 – prepare the muffin batter
- Using a spoon, scoop out the sweet potato flesh into a bowl (discard the skin).
- Add oil and mash thoroughly together into a smooth puree – a potato masher was enough for me, but you can also blend them together.120 ml oil
- Add eggs and mix with a spoon.2 eggs
- In a second bowl, mix together the dry ingredients for the muffins – just mix them with a spoon.230 g wheat flour – all-purpose, 200 g sugar, 2.5 teaspoons baking powder, 2 teaspoons gingerbread spice
- Add the wet ingredients to the dry and mix thoroughly with a spoon – if the batter is too thick, you can add a little milk to it.
- Fill the prepared muffin liners with the batter – I got 14 muffins. Fill the liners to about 3/4 full.
Step 3 – prepare the crumble
- Briefly combine the given ingredients to form a crumbly topping.60 g butter, 60 g sugar, 90 g wheat flour – all-purpose, 1 teaspoon cinnamon
- Sprinkle it over the top of the muffins.
Step 4 – baking sweet potato muffins
- Place the muffin tin into the preheated oven and bake for about 25 minutes – until a dry toothpick comes out.
- After baking, cool the muffins slightly and serve them even warm :)

Sweet Potato Muffins – notes
Some time ago I spotted on Julie Marie Eats blog a recipe for Sweet Potato Bread and I was delighted by this idea. However, I was more in the mood for some muffins than a traditional cake, so I prepared my own version in the form of these small sweet potato muffins. I added sweet and aromatic cinnamon streusel to them, and here they are. Perfect autumn sweet potato muffins :) If you like such spiced, aromatic bakes that warm you up in ugly autumn weather, then you absolutely must try this recipe!

What ingredients are essential for baking sweet potato muffins?
To bake these muffins, you will need a few basic ingredients. Below is a condensed list of products I used and possible substitutes.
- gingerbread spice – I used homemade gingerbread spice, but you can also use store-bought – be sure to check its ingredients – if flour or sugar is listed first, it will be less aromatic. If you don’t have gingerbread spice, you can add about 1.5 teaspoons of ground cinnamon to the muffins.
- oil – I use rapeseed oil, but you can use any other mild-flavored oil, it can also be melted coconut oil, or melted and cooled butter.
- sugar – I used regular granulated sugar, but if you have cane sugar, you can use it, the muffins will have an even better taste.
- butter – for the streusel, you need butter; I use 82% extra butter, you can optionally use a butter blend or good quality vegetable butter.

How to make sweet potato puree for muffins?
In the recipe, I suggested baking the sweet potato in the oven and then mashing it into a puree. You can also boil it. In that case, peel it and cut it into smaller pieces. Cook it until soft and drain thoroughly after cooking. Let it cool and then proceed according to the recipe.

How to store sweet potato muffins?
You can store the muffins at room temperature on the kitchen counter. It’s a good idea to cover them or transfer them to an airtight container to prevent them from drying out and to keep them fresh and soft longer.
You can also freeze sweet potato muffins for about 3 months.
