Ingredients for brownie cookies

  • 100 g dark chocolate
  • 40 g butter
  • 35 g all-purpose flour (2 slightly heaping tablespoons )
  • 1/4 teaspoon baking powder
  • 100 g sugar (1/2 cup)
  • 2 eggs (size L)

  • 100 ml heavy cream (cold)
  • 1 tablespoon powdered sugar (or to taste)

How to make brownie cookies with fruit in gel step by step

    Step 1 – prepare the cookie dough

    • Break the chocolate into pieces and melt it together with the butter – I heat it for about 1 minute in the microwave.

    • Thoroughly mix the chocolate with butter until a uniform mass is formed and set aside to cool.
    • Combine the flour with baking powder.
      35 g all-purpose flour, 1/4 teaspoon baking powder
    • Blend the eggs with sugar until a thick and fluffy mass is formed – I blend for several minutes with a mixer on high speed.

    • Add the cooled chocolate to the beaten eggs.

    • Blend briefly – just until combined.

    • Add the flour and blend briefly.

    • Place the cookie dough in the refrigerator for about 2 hours – it needs to thicken.

    Step 2 – preparing the cookies

    • Preheat the oven to 180 degrees Celsius – in top/bottom heat mode.
    • Remove the chilled dough from the refrigerator and scoop portions of dough with a teaspoon (I first dip the spoon in slightly warm water).

    • Using a second spoon, place the cookies onto a large baking sheet lined with parchment paper.

    • Arrange the cookies with slight gaps, as they will spread during baking.
    • Bake the brownie cookies for about 11-15 minutes.
    • After baking, cool them before filling with cream.

    Step 3 – prepare the cookie filling

    • Mix the mascarpone together with the heavy cream and sugar until a thick and very fluffy mixture is formed.

    • For a nicer appearance of the cookies, I recommend transferring the cream to a piping bag, preferably with a nozzle attached – I used a Wilton 1M star tip.

    • Decorate half of the cookies with the cream.

    • Apply cherries and currants in gel onto the cream.

    • Finally, cover the cookies with a second cookie.

    Chocolate whoopie pies – notes

    My today’s brownie cookies prepared in cooperation with the culinary portal Życie ma smak are delicious chocolate cookies filled with simple mascarpone cream and tasty Polish fruits in gel from Helcom. I used two types of fruit here – cherries in gel and currants in gel. Both these flavors combined perfectly with the intensely chocolatey cookies. Prepare these cookies for a special occasion, and you will surely delight everyone with them!

    What ingredients are needed to make brownie cookies?

    To make chocolate whoopie pies, you’ll need a few basic ingredients. Below, I’m sharing a short list of the products I used, along with possible substitutes.

    • chocolate – dark chocolate is essential here so that the mixture sets properly. You’ll need 100 g of dark chocolate. When shopping, pay attention to the weight of the chocolate, as big brands like Wedel now often make bars of 90 g or even 80 g.
    • butter – I used extra butter; mixed butter or plant-based butter is softer, and cookies made with it will set less firmly during chilling.
    • mascarpone – this is an Italian cream cheese that you can easily find in larger stores and discount supermarkets.
    • heavy cream – I used carton cream (liquid) with 30% fat content

    Can you make gluten-free brownie cookies?

    This recipe uses only a small amount of flour, and it’s very easy to replace it with gluten-free flour. You can also use ground almonds instead of flour. Just remember to use gluten-free baking powder as well. If you don’t have it, you can use a small amount of baking soda instead. Baking soda is stronger than baking powder, so just a pinch is enough here.

    How to store whoopie pies?

    Chocolate brownie pies filled with cream and fruit in gel are best stored in the refrigerator. Immediately after preparation, they can be kept on the counter for a short time (a few hours, depending on the room temperature). After that, it is best to put them in the fridge. Alternatively, you can store the chocolate cakes alone in an airtight container for up to several days. Keep the cream in the refrigerator and assemble the pies with the fruit in gel just before serving.
