  • 100 g sugar (½ cup)
  • 1-2 teaspoons gelatin (+ a little cold water – see notes below the recipe)
  • 300 ml heavy cream (well chilled)

  • 2 teaspoons baking powder
  • 140 g butter (softened)
  • 3 tablespoons oil
  • 200 g sugar (1 cup)
  • vanilla extract (to taste)
  • 3 eggs (size L – at room temperature)
  • 300 ml plain yogurt

How to make strawberry mousse cake step by step

    Step 1 – preparations

    • Line the baking pan with parchment paper or grease it with butter and dust with flour.

    • Preheat the oven to 180℃ in top/bottom heating mode.

    Step 2 – preparing strawberry puree

    • Wash the strawberries, remove the stems, and cut the fruit into smaller pieces.

    • Mix or blend the fruit thoroughly.

    • Strain the strawberries through a fine-mesh sieve – I strained them directly into a saucepan.

    • Add sugar to the strawberries, mix, and heat the mixture until the sugar dissolves and the excess juice slightly evaporates.

    • Cover the gelatin with a little cold water and set aside for a moment to swell.

    • Add the swollen gelatin to the hot strawberries, mix, and set aside to cool completely.

    Step 3 – preparing the creamed batter

    • Sift the flour together with the baking powder through a sieve.

    • Place butter, oil, sugar, and vanilla in a large bowl.

    • Mix them together on high speed until you get a fluffy, light mixture.
    • Add one egg at a time – mix each briefly – just until combined.

    • Add about half of the sifted flour and mix briefly on low speed.

    • Add natural yogurt and mix briefly.

    • Add the rest of the flour and mix briefly – just until combined – stop mixing when you can still see remnants of flour – then fold in the batter with a spoon.

    • Transfer the batter to the prepared pan.

    Step 4 – baking the cake

    • Place the pan with the batter into the preheated oven and bake for about 35-40 minutes – until a wooden skewer comes out clean.
    • After baking, cool the cake completely.

    Step 5 – preparing the strawberry mousse

    • Pour the cold heavy cream into a bowl and whip on high speed until you get very thick whipped cream.

    • Add the cooled strawberry puree to the cream and gently mix with a spoon.

    • Spread the mousse over the cooled cake and smooth the surface.

    • Refrigerate the cake for at least 2 hours – so that the mousse sets.

    Sponge Cake with Strawberry Mousse – Notes

    Strawberry season is in full swing, and with it, my strawberry bakes. Earlier, a recipe for super quick and simple mascarpone and strawberry cookies appeared on the blog, and now I have a recipe for this wonderful mousse cake for you. Despite its fantastic appearance, the cake is not difficult to make, and I think that with my tips and the preparation video, everyone will be able to make this cake in their own kitchen. You have to prepare it too!

    What ingredients are needed to make strawberry mousse cake?

    To prepare the cake, you will need a few basic ingredients that you can easily get in any store. Below is a condensed list of the products I used and possible substitutes.

    • strawberries – I used fresh fruit, but out of season you can use frozen strawberries. In that case, you can put the frozen fruit together with sugar and a little water into a saucepan and heat them together. When the fruit is soft, blend it, then strain the whole mixture through a sieve and add bloomed gelatin.
    • natural yogurt – I used thick Greek yogurt
    • whipping cream – for the mousse, I used 36% whipping cream, which is thicker than 30% and more stable after whipping, so I used 1 slightly heaped teaspoon of gelatin for the strawberries here. If you use 30% cream, I recommend using 2 teaspoons of gelatin for the strawberry puree to make the mousse more stable after preparation.
    • vanilla – I used vanilla extract, but you can also use vanilla flavoring, or a tablespoon of vanilla sugar

    Can you make the cake with other fruits?

    Of course, you can also make this mousse with other fruits – raspberries or blueberries, for example, would work great here. But mousse made with fruits like peaches or mango would also be interesting. Let me know if you prepare this cake with other fruits :)

    How to store strawberry mousse cake?

    Due to the whipping cream-based mousse, the cake is best stored in the refrigerator. It can, of course, also stay out for a while, but if it’s very warm, the mousse will heat up and may become slightly runny. Cake with mousse taken out of the refrigerator will be tastier, but also nicely refreshing.
