Recipe for cinnamon pancakes with chocolate sauce
My today’s churro pancakes, inspired by the famous Mexican churro dessert, are a great idea for a sweet breakfast or a snack. Lightly cinnamon pancakes, sprinkled with cinnamon sugar after frying and drizzled with delicious chocolate sauce, taste absolutely divine! How to make churro pancakes step by step
Step 1 – preparing the wet ingredients
- Transfer yogurt to a bowl, pour in milk and crack in an egg – mix with a spoon or a whisk.120 ml Greek yogurt, 120 ml milk, 1 egg
Step 2 – adding the dry ingredients
- Pour flour into the bowl.120 g all-purpose flour
- Add sugar, baking powder and cinnamon – mix thoroughly with a spoon or a whisk.1 teaspoon baking powder, 0.5 teaspoons cinnamon, 2 tablespoons sugar
Step 3 – frying churro pancakes
- Heat up the pan and lightly grease it with oil – I use a silicone brush.
- Spoon one tablespoon of batter per pancake and leave space between them.
- Reduce the heat under the pan to almost the lowest, you can also cover the pan with a lid and fry the pancakes for about 2 minutes – until small holes appear on the surface.
- Then carefully flip the pancakes to the other side and fry them for about another minute.
Step 4 – coating the pancakes
- Mix sugar and cinnamon in a bowl.3 tablespoons sugar, 1 teaspoon cinnamon
- Remove the fried pancakes from the pan and immediately coat them in sugar – if the sugar doesn’t stick because the pancake is dry, place it on a plate and sprinkle with cinnamon sugar from above.
- Fry the remaining pancakes until the batter is used up – I got 12 pancakes.

Cinnamon Churro Pancakes – notes
I spotted the recipe for these churro pancakes some time ago on the blog I’m hungry fot that and I’ve wanted to make them ever since I saw them. As usual, lack of time and constant busyness meant that I only recently had the opportunity to fry them, and now I’m sharing this recipe further. The pancakes themselves are very simple and quick to make, with a delicate hint of cinnamon. By themselves, the pancakes don’t have much in common with actual churros. It’s only by sprinkling them with cinnamon sugar and drizzling them with chocolate sauce that the pancakes become churro pancakes :) You must try them!

What ingredients are needed to make churro pancakes?
For the pancakes themselves, you only need a few very basic and easily accessible ingredients. Below is a condensed list of the products I used and possible substitutes.
- Greek yogurt – you need thick yogurt here; if you don’t have Greek yogurt, use thick natural yogurt (e.g., Bakoma has one). If you can’t find thick yogurt anywhere, use regular yogurt and add a little more flour if the batter is too thin (see the video below the recipe to see the consistency of my batter).
- milk – I used 1.5% milk, but you can use any other milk, including plant-based milk.
- sugar – I added regular sugar to the pancakes themselves – you can substitute it with powdered sugar, brown sugar, xylitol, or erythritol. I sprinkled the top of the pancakes with brown sugar, but you can substitute it just like the sugar added to the batter.
- all-purpose flour – you can use your favourite. You can also use other light flours – such as spelt or oat flour.

How to make chocolate sauce for churro pancakes?
To prepare the sauce, you will need two basic ingredients – heavy cream (I used 30% cream) and chocolate. Depending on the chocolate used, you will need a different amount of cream. If you don’t have cream, you can use regular milk, but add a little less than you would cream. The hot sauce will be more liquid; after it cools completely, it will become thick – then you can briefly heat it in the microwave to make it more liquid again.

Milk Chocolate Sauce
For this sauce, you will need 50 g of milk chocolate and 50-60 ml of cream (if using milk, use 50 ml). Heat the cream, and when it’s hot, add the chopped milk chocolate to it. Mix thoroughly until the chocolate melts and you get a smooth sauce.
Dark Chocolate Sauce
Here too, use 50 g of chocolate and melt it similarly as described above for milk chocolate. However, use 100 ml of heavy cream here (or about 75 ml of milk).
You can use the sauces warm; they will nicely enhance the aroma of cinnamon sugar. But after cooling and slightly thickening, the sauces will also be delicious. I’ll add that such a chocolate sauce will be excellent not only for churro pancakes but also for sweet crepes, ice cream, and various desserts :)
You can serve these churro pancakes not only with chocolate sauce but also with other favorite toppings. Regular jam, caramel sauce, whipped cream, and of course, fruit will work great.
