Moist chocolate cake with icing – notes
At the turn of August and September, my husband, a group of friends, and I went to the UTMB ultra-running festival in Chamonix, where six of them competed in races. Five of them (including my husband) ran the main 170km distance around Mont Blanc, and one friend ran the CCC distance, a little over 100km. I’ll add right away that everyone completed their races – they were tired, even exhausted, but that dream finish line was a wonderful reward for their effort put into the race itself, as well as into preparing for it. They deserve huge congratulations!

As mental support, I prepared this very cocoa cake with icing for everyone, so they could load up on carbohydrates before the race. Besides this cake, I also baked banana muffins with chocolate chips, and the recipe for them will also appear on the blog soon.
The cocoa cake was so delicious that it was eaten on the very first day – most of it disappeared even on the way to Chamonix. I think that’s enough of a recommendation, and you too must try this universal recipe for cocoa cake in the style of a murzynek, or an American brownie.

What ingredients are needed to prepare cocoa cake?
To make such a simple cocoa cake with icing, you will only need a few basic ingredients that you either already have in your kitchen or can easily buy in any store. Below is a shortened list of the products I used and possible substitutes.
- cocoa – you need bitter cocoa here – it can be regular or defatted, but it cannot be a cocoa drink (the kind for drinking)
- butter – I used extra 82% butter, but you can also use mixed butter, or ultimately, vegetable butter
- natural yogurt – I used thick Greek yogurt, you can also use natural skyr – but a thick one
- all-purpose flour – any flour will be good

Can chocolate icing be replaced?
If you don’t feel like chocolate icing, you can skip it and sprinkle the top of the cake with powdered sugar only. You can also make a very simple chocolate glaze. To make chocolate glaze, you will need liquid whipping cream 30% and chocolate. You can use milk chocolate or dark chocolate. If you use dark chocolate, melt 150 g of chocolate in 100 ml of hot whipping cream. If you use milk chocolate, use a maximum of 70 ml of whipping cream. Stir the glaze until you get a smooth and uniform glaze, cool it slightly to thicken, and then pour it over the top of the cake.

How to serve cocoa cake?
To make the cake look even nicer, I recommend sprinkling it with chocolate sprinkles over the icing or glaze. But you can also use coconut flakes – if you like them. You can also grate dark or milk chocolate and sprinkle the cake with these flakes. It will definitely be delicious!

How to store moist cocoa cake?
To keep the cake fresh, fluffy, and moist for a long time, it’s worth transferring it to an airtight container with a lid, or covering it with a cake dome. You can also freeze the cake for about 3 months.
I hope this recipe for a simple chocolate cake will also be useful to you and that you will gladly come back to it and share it. I would be very happy if you then share your impressions in a comment under the recipe.
