- 100 ml oil

- approx 150-200 g forest fruit mix or berry mix
- approx 30 g pistachios (chopped – optional)

How to make forest bundt cake with fruit step by step
Step 1 – preparations
- If you have frozen spinach, defrost it and drain excess water.200 g spinach
- Grease the bundt cake pan with butter and dust with flour.
- Preheat the oven to 170℃ in convection mode.
Step 3 – preparing the wet ingredients
- Transfer the spinach to a blender (or a tall bowl) and add oil, milk, and lemon juice.100 ml oil, 60 ml milk, 2 tablespoons lemon juice
- Add three eggs to the spinach and blend until smooth.3 eggs
Step 3 – preparing the cake
- Pour flour into a large bowl, add sugar and baking soda – mix the ingredients with a spoon.300 g all-purpose flour, 200 g sugar, 1 teaspoon baking soda
- Pour the blended wet ingredients into the flour.
- Mix everything thoroughly with a spoon.
- Add the fruit to the batter and mix with a spoon.approx 150-200 g forest fruit mix or berry mix
- Transfer the batter to the prepared mold.
- If you have pistachios, you can sprinkle the top of the cake with chopped nuts at the end, but it’s not necessary.approx 30 g pistachios
Step 4 – baking the forest moss cake
- Place the mold with the batter into the preheated oven and bake for about 55-60 minutes – until a skewer comes out clean.
- Cool the cake after baking.

Forest Moss Bundt Cake – Notes
You probably know the cake (or torte) forest moss cake, which has been one of the more popular cakes for a long time. Perhaps you’ve even made forest moss cupcakes. And what do you say to a forest moss bundt cake? This bundt cake is super moist, very quick to make, and wonderfully delicious. As usual – no one will guess (by taste) that there is spinach in the cake. The cake looks beautiful, and thanks to its wonderful green color, it can be an ideal cake for Easter!

What ingredients are essential for preparing the forest bundt cake?
To bake the pound cake, you will only need a few basic ingredients that are easily available in any store. Below is a shortened list of the products I used and possible substitutes.
- spinach – I used frozen, chopped spinach, which I thawed beforehand. You can also use fresh spinach, but then you need to blend it very thoroughly with the wet ingredients so that there are no large pieces of leaves – unless you don’t mind them ;)
- oil – I used rapeseed oil, you can use any other with a light and delicate flavor
- milk – I used 1.5% UHT milk, you can use any milk, including plant-based milk
- baking soda – for the cake to rise well, I used baking soda, which is stronger than baking powder. However, if you don’t have it, use 2.5 teaspoons of baking powder here.
- forest fruits – I used a ready-made mix of forest fruits here – I had frozen fruits and did not thaw them beforehand. You can also use, for example, just raspberries, or raspberries and blueberries.

How to prepare the pound cake for it to turn out well?
If possible, it’s good for the ingredients to be at room temperature – then the batter rises nicely and quickly. I used frozen fruits, which lowered the temperature of the batter, and my pound cake started to rise quite late, but it baked nicely and without a soggy bottom.

How to store forest moss pound cake?
To ensure the forest moss pound cake retains its freshness and moisture for a long time, it’s worth covering it with a cake dome or storing it in an airtight container with a lid. There is no need to store the cake in the refrigerator – it can stay on the kitchen counter for several days. You can also freeze the pound cake for about 3 months.
