Recipe for pistachio puff pastry cookies
My today’s recipe for pistachio palmiers is a “last-minute” type of recipe. To prepare them, you only need 2-3 ingredients, and they’ll be ready in about 30 minutes (including baking). That’s why this is a recipe for cookies for crisis situations – when there’s nothing sweet for coffee, or unexpected guests are coming. Be sure to save this recipe for later!

- approx. 300 g puff pastry (I used ready-made)
- approx. 50-55 g pistachio cream
- approx. 30 g sugar (I used cane sugar – optionally – 2 more heaped tablespoons)

How to make pistachio palmiers step by step
Step 1 – preparations
- Take the puff pastry out of the fridge about 20-30 minutes before preparing the cookies, to let it warm up slightly.approx. 300 g puff pastry
- Preheat the oven to 200 degrees (convection) or 210 degrees (top/bottom heat mode).
Step 2 – preparing the cookies
- Roll out the dough on the kitchen counter.
- Spoon the pistachio cream in a few places – a teaspoon of cream per portion is enough.approx. 50-55 g pistachio cream
- Spread the pistachio cream over the top of the dough, leaving empty margins on the narrower sides.
- Fold the dough from the narrower sides to about 1/4 of the dough’s length.
- Fold the dough again so that it almost reaches the center.
- Finally, fold one part over the other.
- Cut the dough with a sharp knife into slices about 1-1.5 cm wide – I got 12 cookies.
- You can now lightly coat each cookie additionally in sugar.approx. 30 g sugar
- Arrange the cookies on a baking sheet lined with parchment paper – cut side up.
- Arrange the cookies with slight gaps, as they will rise slightly during baking.
Step 3 – baking the cookies
- Place the baking sheet with cookies into the hot oven – on the middle rack and bake for about 20 minutes – until the cookies rise and turn golden brown.

Pistachio puff pastry cookies – notes
Today I invite you to a super simple and super quick recipe. And very tasty too! To make these cookies, you only need two ingredients – puff pastry and pistachio cream. Although I also recommend adding a small amount of sugar, which caramelizes slightly during baking and adds crispiness and sweetness to the cookies.
Palmiers are cookies sometimes called “pig’s ears” or “elephant’s ears” and in their traditional form consist only of puff pastry coated in sugar, rolled, cut into portions, and baked. You can also find such traditional palmiers on my blog – be sure to try them!

What ingredients are essential for baking palmiers?
The base here is, of course, puff pastry. If you don’t have time to prepare the dough yourself, you can, of course, use ready-made store-bought pastry. I used fresh store-bought pastry. If you have frozen pastry, you must defrost it beforehand. If you have more time and inclination, I recommend preparing homemade puff pastry; it will certainly be tastier and of better quality than store-bought.
The second ingredient is pistachio cream. I used cream from Biedronka (GustoBello), but you can use a cream of another brand. If you don’t have pistachio cream but fancy such cookies with cream, you can use Biscoff cream or chocolate-nut cream (like Nutella, for example).

How to enhance the flavor of puff pastry cookies?
If you fancy more “rich” pistachio palmiers, I highly recommend sprinkling chopped pistachios over the cream (before rolling the dough). Instead of pistachios, you can also use, for example, chopped almonds or other nuts. Nuts will add flavor and crunchiness to the cookies.

How to store pistachio palmiers?
Not so many cookies are made that they would last particularly long and need to be stored. But if you don’t eat all the cookies right away, I highly recommend transferring them to an airtight container. Then they won’t lose their crispness and won’t “catch” moisture from the air.
